Slow Cooker Meatloaf with beef mince, a delicious low-carb, gluten-free, high-protein, and ridiculously easy-to-make recipe to lick your fingers clean. Healthy, packed with amazing flavours, this meatloaf is the very best you can get. A great dish for Easter.
For many years I used to think that meatloaves were just not my thing. Perhaps because the Romanian meatloaf, which is a traditional Easter dish, usually uses lamb meat and different organs like liver, heat, kidneys, etc.
But this meatloaf only used lean beef mince, herbs, onion and seasoning, and it's so packed with goodness, it's hard not to like it. Plus it has a gorgeous ketchup mixture glaze that adds even more flavour to it.
And unlike a traditional meatloaf that is cooked in the oven, this one is cooked in the crock pot. Which means, no effort whatsoever, but you dump the ingredients in the slow cooker, and a few hours later you get to enjoy the best meatloaf ever!
No need to wait around for at least an hour for dinner to be ready, you can set the crock pot in the morning, and have dinner on the table once you are home .Let's see how it's made!

Step-by-step photos and instructions
- in a large bowl, add the chopped onion, ground beef, almond flour, parmesan, salt, pepper, Italian herbs and eggs
- mix well to combine
- line the slow cooker with kitchen foil, add the meat mixture and press it down well with the back of a spoon
Using kitchen foil means no mess, less to clean, plus the meatloaf can be easily removed from the crock pot once it's ready. Nicer presentation too if you want to impress your guests.
- in a small bow, combine the tomato paste, yellow mustard and Worcestershire sauce
My meatloaf sauce does not use brown sugar or any kind of sugar, but it's amazingly delicious. Plus, the tomato paste is naturally sweet, no need for added refined sugar.
- spread half of the sauce over the meatloaf, and cook on low for 6 hours, or on high for 4 hours
What to serve with meatloaf?
Now, this beef meatloaf can be enjoyed either as an appetizer, or as a main meal together with some veggies and carbs. My family enjoyed it with mashed potatoes and peas, but any side dish would do.
From Crispy Roasted Garlic Parmesan Potatoes, Oven Roasted Garlic Rosemary Potatoes, Easy Cheesy Scalloped Potatoes, or Garlic Smashed Potatoes, there is plenty to choose from.
Veggies, again, you can go for any roast root vegetables, or broccoli, green beans, cauliflower, asparagus, and so on. And that's it, enjoy it, you are in for a treat!
Expert tips
My meatloaf is LOW CARB AND GLUTEN FREE, I replaced the regular breadcrumbs with almond flour, which worked like a dream. But, if you are not too bothered about a low carb diet, the feel free to use breadcrumbs, that's absolutely fine and it should not change the texture of the meatloaf.
There is one thing you must keep in mind when you make a meatloaf in the slow cooker: ALWAYS USE LEAN MEAT. If you use ground beef with a higher amount of fat, you end up with a meatloaf that is covered in grease. Not cool!
By any means, you can use a combination of beef and pork if you like, but again, make sure the pork mince is lean as well. The binding ingredients are eggs and almond flour, they also give a lovely taste, so do not omit them.

Slow Cooker Meatloaf
Ingredients
- 750 g lean ground beef 2 lbs (meat with 5% fat)
- 1 small onion
- ¼ cup almond flour
- 2 tablespoon grated parmesan
- 2 eggs
- 1 tablespoon Italian herbs
- ¼ teaspoon salt
- â…› teaspoon ground black pepper
- 4 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 2 teaspoon yellow mustard
Instructions
- Peel and chop the onion finely.
- In a bowl, add the ground beef, chopped onion, parmesan, eggs, almond flour, herbs, salt and pepper, and mix well to combine.
- Line the slow cooker with kitchen foil, add the mince beef mixture and press it down well with the back of a spoon.
- In a small bowl, combine the tomato paste, sauce and mustard, and spread half of it over the meatloaf.
- Cook on low for 6 hours or on high for 4 hours.
- Once it's cooked, carefully remove it from the slow cooker by holding the edges of the kithcken foil well (there will be some of the liquid released by the meat), then spread the remaining sauce over.
- Serve hot or cold.
