Eve's Pudding, a classic British dessert made with apples topped with a light vanilla sponge and baked until golden. It's a very easy pudding to make, and it can be served either warm or cold with custard or ice cream. Delicious and quick to make, this dessert can be served throughout the year.
A scrumptiously indulgent dessert, this Eve's pudding recipe is a cross between an apple crumble, an apple cake and an upside down apple cake. It uses the apple base from the crumble and the sponge from the upside down cake.
The base is made with apples tossed with lemon juice and cinnamon for a lovely kick, while the sponge is really moist and light with a hint of vanilla. Whereas the apple cake has the apples mixed in the batter.
Tossing the apples in lemon juice not only adds a sharp kick, but also prevents the apples from browning too quickly and keeping them fresh until they are ready to be baked.

Ingredients used
- butter - soft, but not melted, as it needs to be creamed together with the sugar
- sugar - either caster or granulated
- flour - self-raising flour brings the best results
- baking powder - helps achieve a light sponge
- eggs - at room temperature
- milk - to loosen up the batter
- vanilla extract - or any other extract of your choice
Variations
Another variation of this Eve's pudding uses raisins as well as apples - I omitted them in my recipe, but you can definitely use them if you wish, or indeed any other dried currants of your choice.
I would use a quarter of a cup of raisins for this recipe, I don't think there is need for any more than that, as the apples are the main ingredient here. Just toss them together with the apples, and job done.

- peel, core and chop the apples into chunks
- add them to a mixing bowl together with the lemon juice and cinnamon, and toss well to coat
- arrange them onto an ovenproof dish that has been buttered well
- to make the sponge, add the soft butter and sugar to a large mixing bowl, and use a hand mixer to cream them well
- add the eggs one by one mixing well after every addition
- sift in the flour, add the baking powder, vanilla extract and milk and use a spatula to mix everything well
- top the apples with the sponge
- bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 30-35 minutes or until the sponge is golden and a skewer inserted in the middle comes out clean
Expert tips
I highly recommend using cooking apples for this dessert, they have the perfect amount of tartness which works wonderfully well with the rest of the ingredients.
They also have the right texture for baking, and they do not need cooking beforehand, they soften really well as they bake.

- 4 large cooking apples
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 125 g self-raising flour
- 125 g sugar
- 125 g butter, soften
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 2 eggs
- 1 teaspoon baking powder
Instructions
- Peel, core and chop the apples into bite-sized chunks.
- Add them to a bowl together with the cinnamon and lemon juice and toss well.
- Arrange them into an ovenproof dish and set aside.
- To make the sponge, add the sugar and butter to a large mixing bowl and use a hand mixer to cream well until you have a pale yellow colour.
- Add the eggs once by one mixing well after each addition.
- Sift in the flour, add the baking powder and milk, and mix to get a batter.
- Top the apples with the batter and bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 30-35 minutes or until golden and a skewer inserted in the middle comes out clean.
