Eve's Pudding
Eve's Pudding, a classic British dessert made with apples topped with a light vanilla sponge and baked until golden. It's a very easy pudding to make, and it can be served either warm or cold with custard or ice cream. Delicious and quick to make, this dessert can be served throughout the year.

- 4 large cooking apples
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 125 g self-raising flour
- 125 g sugar
- 125 g butter, soften
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 2 eggs
- 1 teaspoon baking powder
Peel, core and chop the apples into bite-sized chunks.
Add them to a bowl together with the cinnamon and lemon juice and toss well.
Arrange them into an ovenproof dish and set aside.
To make the sponge, add the sugar and butter to a large mixing bowl and use a hand mixer to cream well until you have a pale yellow colour.
Add the eggs once by one mixing well after each addition.
Sift in the flour, add the baking powder and milk, and mix to get a batter.
Top the apples with the batter and bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 30-35 minutes or until golden and a skewer inserted in the middle comes out clean.
- I highly recommend using cooking apples for this dessert, they have the perfect amount of tartness which works wonderfully well with the rest of the ingredients.
- They also have the right texture for baking, and they do not need cooking beforehand, they soften really well as they bake.
