Puff Pastry Palmiers with cottage cheese, dried currants and a hint of lemon, a delicious sweet breakfast or brunch that is incredibly easy to make with just a handful of ingredients. The cottage cheese filling goes wonderfully well with the golden flakiness of the puff pastry to create these indulgent pastries that everyone will love.

If you like a hotel-style continental breakfast, you will definitely enjoy these sweet puff pastry palmiers - they are quick and super easy to make at home with zero fuss and effort.
Palmiers can be as indulgent as one wishes, and there are lots of fillings you can go for, both sweet and savoury. And while the cottage cheese filling might sound like an odd choice, it works incredibly well here.
I got the inspiration from my Romanian Easter Cake, which is very popular in Springtime, and uses a cow's cheese or cottage cheese filling. Cheese is heavily used in the Romanian cuisine in lots of treats, both sweet and savoury.
You can go for a different shapes too not just palmiers, pinwheels would be my second choice when it comes to puff pastry treats, from savoury bites like my ham and cheese pinwheels or sweet like my mincemeat pinwheels.
So put the kettle on and enjoy some scrumptious palmiers, you will be surprised how quickly they disappear from the table! They can be enjoyed on special occasions like Mother's Day or any other celebrations.

Ingredients overview

- puff pastry - I used ready-rolled puff pastry which was refrigerated, if you have frozen puff pastry, you have to make sure it's completely thawed before working with it
- cottage cheese - I prefer full-fat cottage cheese as it's richer, but low fat can work too. Alternatively, you can use farmer's cheese or cow's cheese or feta cheese
- dried currants - or sultanas/raisins
- sugar - either granulated or caster sugar would do
- egg - a small egg, which was beaten and used only half of it as a binding agent
- lemon zest - it adds tons of flavour, I highly recommend using it
Why the recipe works
- ready-made palmiers or other sweet pastries can be quite expensive - whereas if you buy a ready-made puff pastry roll and the rest of the ingredients, you can feed the whole family in a fraction of the price you would pay for the store-bought pastries
- they are super easy to make - litereally oven a beginner on the kitchen can nail them
- the palmiers are fun to make - perhaps you can get the kids involved too?
- they are utterly delicious!
Step-by-step photos and instructions
- in a large mixing bowl, add the currants, sugar, lemon zest and cottage cheese
- beat the egg in a separate bowl, then add it to the rest of the ingredients
- use a spatula to mix everything well
- spread the mixture over the puff pastry, keeping the edges clear

- start rolling up the left vertical side inward, stopping in the middle of the dough
- then roll up the right side of the dough so that the two rolls should be meeting at the middle and touching ( see photo 5)
- use a sharp knife to cut segments of 1 inch in thickness (see photo 6)
- arrange them onto a baking tray lined with non-stick paper, making sure you leave plenty of room between them
- bake at 200 degrees Celsius (390 Fahrenheit) for 25 minutes or until golden

Expert tips
Make sure you leave plenty of room between each palmier when you arrange them onto the baking tray, they will expand a lot in the oven, I use 2 trays to ensure they palmiers weren't touching.
A non-stick parchment paper is a must for the baking trays, the filling will caramelise slightly when when the palmiers bake and it will be easy to remove from the paper, but not so much from the tray.
The cottage cheese filling might look a bit sloppy, but don't worry, it looks just right, the egg will set the filling nicely, and the palmiers will be perfect.

Sweet Puff Pastry Palmiers
Ingredients
- 1 ready-rolled puff pastry
- 250 g cottage cheese
- 1 small egg
- ¼ cup dried currants
- ½ tablespoon lemon zest
- 3 tablespoon granulated sugar

Instructions
- Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
- In a large mixing bowl, add the cottage cheese, sugar, lemon zest and mix.
- In a small bowl, beat the egg, and use only half of the amount of egg to add to the rest of the ingredients.
- Start rolling up the left vertical side inward, stopping in the middle of the dough.
- Roll up the right side of the dough so that the two rolls should be meeting at the middle and touching.
- Use a sharp knife to cut segments of 1 inch in thickness, then arrange them onto a baking tray lined with non-stick paper, making sure you leave plenty of room between them.
- Bake at 200 degrees Celsius (390 Fahrenheit) for 25 minutes or until golden.
- Allow them to cool down completely before serving.
