Sweet Puff Pastry Palmiers

Puff Pastry Palmiers with cottage cheese, dried currants and a hint of lemon, a delicious sweet breakfast or brunch that is incredibly easy to make with just a handful of ingredients. The cottage cheese filling goes wonderfully well with the golden flakiness of the puff pastry to create these indulgent pastries that everyone will love.

Ingredients

  • 1 ready-rolled puff pastry
  • 250 g cottage cheese (1 cup)
  • 1 small egg
  • 30 g dried currants (¼ cup)
  • ½ tablespoon lemon zest
  • 3 tablespoon granulated sugar

Instructions

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • In a large mixing bowl, add the cottage cheese, sugar, lemon zest and mix.
  • In a small bowl, beat the egg, and use only half of the amount of egg to add to the rest of the ingredients.
  • Start rolling up the left vertical side inward, stopping in the middle of the dough.
  • Roll up the right side of the dough so that the two rolls should be meeting at the middle and touching.
  • Use a sharp knife to cut segments of 1 inch in thickness, then arrange them onto a baking tray lined with non-stick paper, making sure you leave plenty of room between them.
  • Bake at 200 degrees Celsius (390 Fahrenheit) for 25 minutes or until golden.
  • Allow them to cool down completely before serving.

Notes

  • Make sure you leave plenty of room between each palmier when you arrange them onto the baking tray, they will expand a lot in the oven, I use 2 trays to ensure they palmiers weren't touching.
  • A non-stick parchment paper is a must for the baking trays, the filling will caramelise slightly when when the palmiers bake and it will be easy to remove from the paper, but not so much from the tray.
  • The cottage cheese filling might look a bit sloppy, but don't worry, it looks just right, the egg will set the filling nicely, and the palmiers will be perfect.
