A super simple Tomato and Cucumber Salad with red onion and a splash of vinegar, vegetable oil and nicely seasoned with salt, a refreshing and delicious summer salad that is bursting with fantastic flavours. No unnecessary heavy dressings, no fancy ingredients, this salad is healthy, nutritious and so delicious in its simplicity.
Whether you grow your own vegetables or you buy fresh produce from your local farmers' market or supermarket, there is no better time to get delicious vegetables than at this time of the year.
Tomatoes and cucumbers are never as tasty as they are when they are in season in the heat of the summer. I basically stop buying fresh tomatoes and cucumbers from the shops once they are past their season as they are tasteless and expensive.
So make the most of the summertime produce with this fantastic tomato and cucumber salad that will knock your socks off with its freshness and vibrancy.
Forget about ready-made rich dressings that hide the very taste of the ingredients used, all you need for a good salad, apart from fresh veggies are salt, oil and vinegar. And nothing else!
Cider vinegar is my favourite in salads, it really adds a good kick to the salad, whereas the vegetable oil is mild and odourless, which means you really get to enjoy the tomatoes and cucumber.
Growing up in Romania, tomato and cucumber salad was a staple dish in summertime when temperatures often went past 35 degrees Celsius. Trust me, cold salads straight from the fridge are the very best you can eat in that heat!

Ingredients used
- tomatoes - you can use anything you have around: tomatoes on the vine, cherry tomatoes, roma tomatoes, anything goes - I used regular tomatoes on the vine, ripe and juicy and delicious
- cucumber - I used an English cucumber, but any cucumber should do
- red onion - works the best in salads, but you can use regular onions or shallots too
- vinegar - I used cider vinegar, no need for something fancy
- oil - vegetable or sunflower oil are the most common for salads in Romania, so that's what I tend to use, I guess it's just habit, but olive oil can be used too
- salt - a little goes a long way here to bring out the very flavours of the veggies
How to make tomato and cucumber salad
- chop the tomatoes and peel and chop the cucumber
- add them to a bowl together with the peeled and chopped onion, the vinegar, oil and salt
- toss well to combine
- refrigerate until ready to use
Expert tips
The fresh tomatoes and cucumber tend to release quite a bit of liquid once the salad is made, so if you are planning to take this salad to a bbq or picnic, make sure you transfer it to a good tupperware with a lid that closes well, or it will leak everywhere.
Don't drain the liquid though, if you have some crusty bread, use that to dip into those juices, trust me, it's the best thing you can have! Nothing gets lost with salads!

Tomato and Cucumber Salad
Ingredients
- 8 tomatoes on the vine
- 1 English cucumber
- ½ red onion
- ½ teaspoon coarse salt
- 1 tablespoon cider vinegar
- 1 tablespoon vegetable oil
Instructions
- Peeled and chop the cucumber and onion, and chop the tomatoes.
- Add them to a bowl together with the salt, vinegar and oil.
- Toss well to combine.
- Refrigerate until ready to serve.
