A delicious and refreshing Strawberry Banana Smoothie with Coconut Milk, only 3 ingredients, and you are ready to face even the hottest summer. A vegetarian and vegan-friendly drink that is quick, easy, healthy and so delicious.

Smoothies are great way of starting your day right. If you are short of time to enjoy a proper breakfast, throw some of your favourite fruit or/and vegetables in the blender together with your regular milk or plant-based milk, and you get one good smoothie that is so delicious.
And it keeps you full for long too. There is no right or wrong here, and crazy combinations are allowed, whatever takes your fancy, just go for it. Strawberries and bananas just make one happy couple, and they work great together.
One note here! Make sure the strawberries and bananas you use are well ripe, they have a natural sweetness that gives that awesome taste we love. Summer time is the best season for strawberries, so do take advantage of it.
And, by the way, never ever spoil the taste and nutritional value of a smoothie by adding refined sugar. That's just wrong!

How to make a strawberry and banana smoothie with coconut milk
It's really just a matter of throwing everything in the blender and blending until smooth. It's that simple! Well, perhaps I should point out that the leafy stems of the strawberries should be removed, although that's pretty obvious, right?
- Rinse the strawberries under cold water, remove the leafy stems.
- Peal and slice the banana, then add it to a blender together with the strawberries and the coconut milk.
- Blend until smooth.
- Transfer to a mason jar or glass and chill for at least 30 minutes.
Expert tips
Now, when it comes to coconut milk, you can either use the canned coconut milk, with usually has the coconut cream on top, or the drinkable coconut milk that usually comes in a carton.
Note! If you use the canned coconut milk, you can either shake it well to mix the cream with the milk, or scoop out the coconut cream and use it in any other recipe, it's entirely up to you.

If you use frozen strawberries, you don't need to cool. Also make sure your coconut milk is fresh. I think mine had been in the fridge too long

Strawberries and coconut sound like a perfect combination for warm summer days. I agree with you about strawberries, too. I can't get enough of them in the summer months, especially when they're locally grown. The imported ones in supermarkets over the winter are definitely not for me.

You are right, Millie, supermarket fruit are tastelss. Nothing compares to the fresh fruit straight from the farmers. I'm going to Romania this week to visit my family and l cannot wait to eat some fresh strawberries straight from the garden, they are so sweet and juicy. No chemicals whatsoever.
