Loaded Potato Wedges in the Air Fryer, a fantastic dish to feed a crowd. It's perfect for sharing, and it can be enjoyed as a meal on its own, or as a side dish for pretty much any occasion. Serve it with a fried egg on top, and you have a hearty meal that everyone will tuck into.
Good potato wedges are such a treat! Nice and crispy on the outside, but deliciously fluffy on the inside, cooked to a golden perfection - it does sound amazing to me. But load them with cheesy goodness, ham, black olives and pickled japalenos, and you get a dish to die for!
But wait, it does get even better! Fry an egg and top all this goodness with it - I am drooling as I'm writing! That was such a good dish, and I am sharing it with you today, I am telling you, it's absolutely delicious!
You don't really need an excuse to make it, although it does sound like the right kind of food that you'd enjoy on a Game Day, Superbowl, or any other get-together occasion. Or, why not, just because you feel like having some good food.
The pickled jalapenos really add so much to it, they do take any dish right to the next level, isn't it? Altough you can use regular jalapenos, I highly recommend the pickled ones, they are so good!
I made these loaded potato wedges in the air fryer, but they can definitely be baked in the oven as well, of you don't have an air fryer. The cooking time might be slighly longer in the oven, but the end result will be very similar.

Ingredients used to make potato wedges
- potatoes - you can use any kind of potatoes you have, I used new potatoes for this recipe
- salt - the sea salt adds a bit of texture to the wedges, so I prefer using this instead of regular table salt
- oil - I use sunflower oil, but you can use any other oil you have around
Ingredients used to load the potato wedges with
- jalapenos - I used pickled jalapeno slices, but you can also use fresh jalapenos or any other chillies
- cheddar cheese - it can be swapped for any other hard cheese of your choice
- black olives- you can also use green olives or a combo of the 2
- ham - deli ham or leftover ham, whatever you have around
Variations
When it comes to loaded potato wedges, or loaded potato fries, whatever you choose to go for, the sky is the limit and you can pretty much add anything else you fancy: salami, sausages, bacon, cold cooked chicken, peppers, fried onions, garlic, herbs so so much more.
How to make loaded potato wedges in the air fryer
- Peel and cut the potatoe into wedges - I used new potatoes, so instead of peeling them, I just slightly scraped the skin off
- Add the potato wedges to a bow, season them with salt, and drizzle the oil over them
- Shake the bowl well to coat the potatoes in oil
- Transfer them to the air fryer drawer and cook for 30 minutes at 180 degrees Celsius (350 Fahrenheit) until golden and cooked through - shake the drawer a few times during the cooking to ensure an even golden colour
- Once the wedges are ready, load them with the cheese, olives, jalapenos and ham and air fry for a further 5 minutes
- Serve immediately - we had ours with a fried egg on top
Expert tips
Making potato wedges in the air fryer is a very easy job - depending on the thickness of the wedges, they are ready in only 30 minutes - how amazing is that!
But if you want to make these potatoes in the oven, follow the exact same steps, but keep an eye on the potatoes, as they might take longer than 30 minutes to cook and possibly the would need to be cooked at a higher temperature.
My Oven-Baked Paprika Potato Wedges were baked at 220 degrees Celsius ( 430 Fahrenheit) for 35 minutes, so that's just for you to have an idea on baking times in the oven.

Ingredients
- 7 medium potatoes
- 1 tablespoon sunflower oil
- 1 teaspoon sea salt
- 1 cup grated cheddar cheese
- ½ cup sliced black olives
- ½ cup sliced pickled jalapenos
- ½ cup ham, cut into cubes
Instructions
- Peel and cut the potatoes into wedges.
- Add the wedges to a bowl, season with salt and drizzle the oil over.
- Shake the bowl well to coat the potatoes in oil.
- Transfer them to the air fryer and cook for 30 minutes at 180 degrees Celsius (350 Fahrenheit) for 30 minutes, shaking the drawer a few times during air frying to ensure an even cooking.
- Once the poatoes are cooked through, top them with the cheese, ham, olives and jalapenos and air fry for a further 5 minutes.
- Serve them immediately - we had ours with a fried egg on top.
