    Leftover Roast Beef Sandwich

    Leftover Roast Beef Sandwich with arugula salad (rocket salad), horseradish sauce, picked beetroot and a thin coating of mayo spread on crusty sourdough bread, a fantastic way of using up any leftover beef you may have from your Sunday dinner or any other celebration. Super quick and easy to make, this sandwich is so delicious!

    Nothing can beat a good old Sunday roast, it has become a way of life, and part of our cultural background. It's hugely satisfying, heavenly delicious, and it always leaves room for creativity in the kitchen. The actually roast meat is certainly the centrepiece of the Sunday dinner, and cooking it right is crucial.

    I can't quite say I have a preference for a certain roast, although roast chicken is really easy to make, and if you go for spatchcock chicken you also get a really quick roast on the table too. But roast pork and roast beef are as simple to make, even if a large chunk of meat might seem pretty intimidating to deal with.

    And the second best part of having a roast dinner, apart from the feast itself, it's definitely the leftovers. I have this post on Best Leftover Recipes where I have lots of ideas how to transform any leftovers into fabulous new dishes.

    And this amazing roast beef sandwich makes a great addition to the leftover list. Who doesn't like sandwiches? They might seem boring, but put together the right way, they can taste and look really impressive.

    HOW TO MAKE A LEFTOVER ROAST BEEF SANDWICH

    As a nation, British people love a good sandwich, and the abundance of ready-made sandwiches that are on offer out there speaks volume. But making your own delicious sandwich is super simple, and it can looks as appetizing as an expensive ready-made ones.

    For my roast beef sandwich I chose a few simple ingredients that go wonderfully well with beef: sourdough bread, horseradish sauce, arugula or rocket salad, mayo and pickled beetroot.

    I used the combo beef, arugula and horseradish sauce with my Mini Yorkshire Pudding Canapés, so I knew that this is definitely a winning combination. The pickled beetroot slices bring colour and a hint of sweet and sour tanginess.

    To assemble the sandwich, lightly spread the mayo on one side of the bread slice, arrange the beetroot slices, beef slices, arugula salad and drizzle over the horseradish sauce. Top with the second slice of bread, and voilà, the best leftover beef sandwich!

    TIPS AND TRICKS

    Sandwiches are a lifesaver when time is short and more elaborate dishes are not an option. But that doesn't mean they have to be the boring option. We often go for sandwiches of all kind and make it into a big Afternoon Tea Party.

    If you don't have arugula salad for the beef sandwich, regular salad can be used, or, to take it to the next level, use some leftover coleslaw if you have any. The beetroot is optional, or you can use any other pickles you like.

    Mayo and be swapped with a bit of butter, it just gives a nicer touch to a sandwich if you use any spread before you assemble the rest of the ingredients. But then that's just me, feel free to omit them if you like.

    The horseradish sauce can be pretty strong if you don't use it often - and even then, just use it sparsely, too much can make your mouth go on fire- you can go for your regular sauce instead if you are not a big fan of the horseradish sauce. And there you go, a posh sandwich for every occasion, do give it a go!

    Ingredients
    • 2 slices sourdough bread
    • 2 slices leftover roast beef
    • 1 teaspoon mayo
    • 1 teaspoon horseradish sauce
    • 4 slices pickled beetroot
    • ½ cup arugula salad (rocket salad)
    Instructions
    1. Spread the mayo on one side of a bread slice.

    2. Arrange the pickled beetroot slices, beef slices, arugula salad and drizzle the horseradish sauce over.

    3. Top with the remaining bread slice, and enjoy!
