Leftover Goose Wraps made with tortilla wraps, iceberg lettuce, cucumber, red peppers and pickled garlic and a good helping of garlic mayo and tabasco for a spicy kick, a delicious way of enjoying any leftover roast goose you may have around. It's a quick and easy recipe that requires minimal prep and effort, but it's wonderfully delicious and filling.
Roast Goose might not be your regular Sunday roast nowadays, it's indeed that kind of luxurious roast that you enjoy at Christmas or special occasions. But it is the kind of bird our parents or grandparents would have enjoyed back in the days and it's so delicious.
And if you treated yourself with a gourmet Christmas dinner and you have some leftovers, what a better way to put them to good use than in this fantastic leftover goose recipe.
Wraps are such a lifesaver when time is short, but you still want to enjoy a good meal that is delicious, nutritious and a crowd pleaser. My absolutely favourite wraps are my grilled chicken avocado wraps and hummus and roasted vegetable wraps.
Whether you use regular flour tortilla wraps for corn wraps, these leftover goose wraps will go down a treat with everyone, fussy eaters included. You can either serve them as a light lunch, at home or on the go, or as part of a heartier dinner with some roasties or chips on the side.

Ingredients used
- tortilla wraps - I used flour wraps, but corn wraps are a good choice too
- leftover goose- I shreded the leftover meat, but you can also cut in into cunks
- iceberg lettuce - or any kind of salad that you have around, it doesn't have to be this exact one
- cucumber - cut into matchsticks for a good crunch
- red peppers - or any other colour, that's what I had around
- pickled garlic - it's not as pungent as fresh garlic, but it's so delicious
- garlic mayo - can be replaced with regular mayo if you wish
- tabasco - or any other chilli sauce of your choice
Step-by-step photos and instructions
- heat up the shredded goose until the edges are crispy and it's sizzling nicely
- remove the goose from the pan, and add a tortilla wrap
- leave it to warm up and get sightly brown spots on each side, it shouldn't take longer than 30 seconds on each side
- repeat with the rest of the wraps
- to assemble, top each wrap with shredded lettuce, goose, cucumber cut into matchsticks, red peppers cut julienne and a few cloves of pickled garlic
- drizzle some garlic mayp and tabasco and serve immediately
Expert tips
These wraps work well with any other kind of leftover meat: leftover chicken from your whole roasted chicken or spatchcock chicken, leftover beef from your roast beef, or leftover pork from your roast pork or roasted pork belly.
You can use the wraps straight out of the package, but I highly recommend heating them up a bit in the pan, they work a treat and taste so much better.
If you don't have any wraps, you can also turn the leftover goose into sandwiches instead, and use regular sliced bread to make the best leftover goose sandwich ever.
Or you can use small tortilla wraps or crunchy taco shells, and you get the most delicious leftover goose tacos.

Leftover Goose Wraps
Ingredients
- 1 ½ cup shredded leftover goose ( from roast goose)
- 1 iceberg lettuce
- ¼ English cucumber
- 1 red pepper
- ¼ cup pickled garlic cloves
- ½ cup garlic mayo
- 1 tablespoon tabasco
- 4 tortilla wraps
Instructions
- Heat up a frying pan over a medium heat.
- Add the shredded goose and leave it to crisp up and sizzle nicely for 8-10 minutes.
- Remove the goose from the pan and set aside.
- In the same pan, add a tortilla wrap, and leave it to heat up for 30 seconds on each side.
- Repeat with the rest of the wraps.
- Shred the lettuce, cut the cucumber into matchsticks and cut the pepper julienne.
- To assemble the wraps, top each wrap with shredded luttuce, goose, a few cucumber sticks, a few pepper sticks, and drizzle mayo and tabasco over.
- Serve immediately.
