Ham and Cheese Waffles with spring onions, a delicious breakfast or brunch recipe that is ready from scratch in well under 20 minutes. It's a quick and easy savoury dish for all ages, it's hearty and filling, and healthy too!
With cereal being one of the most popular and quickest breakfast options on a weekday morning, we tend to leave the spoiling for the weekend, when time isn't as short, and we don't need to rush anymore.
I always make pancakes, muffins or waffles for our breakfast on a Saturday or Sunday, it has become our tradition, and I love taking time to prepare a delicious feast.
These savoury waffles are a nice twist on the classic sweet waffles. Adapted from my Banana Waffles recipe, which has no refined sugar added, my ham and cheese waffles have a lovely fresh kick from the spring onions.
The recipe makes 2 whole waffles, or 8 triangles, which can easily feed a family of 4. You can up the amounts of ingredients needed if you are cooking for more. Serve them with a poached or fried egg, for the ultimate brunch experience!

Ingredients used
- plain flour - you can also use wholemeal flour or half plain half wholemeal
- butter - I prefer salted butter for savoury recipes
- milk - I recommend full-fat or semi-skimmed milk
- egg - at room temperature
- ham - either deli or leftover cooked ham
- cheese - I used grated cheddar cheese, but any other hard cheese of your choice should do
- spring onions - you can swap them for chives if you wish
- baking powder - it helps with the fluffy texture
Step-by-step photos and instructions
- In a small bowl, beat the egg well using a fork, then pour over it the milk and melted butter, and mix well ( see photo 1&2)
- In a large mixing bowl, sift in the flour, add the baking powder, ham cut into cubes , chopped spring onions and grated cheese
- Pour over the wet ingredients, and use a spatula to mix everything well
- Brush the waffle maker with melted butter, and add half of batter, spreading it well
- Cook until the waffles are golden and cooked through
- Repeat with the remaining batter
Expert tips
Waffle makers come in different sizes and shapes, so you might have the adjust the amount of batter that goes in to make sure it doesn't spill over when the waffles are cooking - you can end up with quite a mess!
Do not be tempted to add more liquid to the batter, it might look a bit thick, but it works perfectly for waffles, if it's too wet and thin, you won't get the lovely crunchy on the outside and fluffy on the inside texture.

Daniela Apostol says
I have tried, but it seems safe to leave it in the fridge overnight.
