Chocolate Nut Clusters made with maple and honey roasted mixed nuts like almonds, cashew nuts, pistachios, peanuts and pecans coated in melted dark chocolate, a delicious snack to enjoy whenerver you feel peckish. These clusters are incredibly easy to make, and way better than any shop-bought snacks.

If you like snacking as much as I do, you will know that finding a good snack when hunger strikes, but it's not quite meal time yet, can be quite a challenge. And while I do enjoy a sweet and carby treat too, I will always choose better options if I can help it.
These chocolate-covered nuts clusters are just what I needed, they keep me full for longer, are made with no refined sugar added, but instead are packed with a good mixture of nuts that nice and crunchy and so nutritious too.
You could just throw some mixed nuts in a bowl, coat them in melted chocolate, then let them set, and call it a snack, but roast them in a nice coating of maple syrup and honey, and you take these clusters to the very next level.
They are sweet, salty, sticky and so crunchy - oh my goodness! Such a treat! You can definitely enjoy them just roasted, but coating them in chocolate in pure perfection!
The nut clusters stay crunchy for ages, just make sure you keep them refrigerated once set, and enjoy a good snack at home or on the go, they are so good!

Ingredients used

- a selection of mixed nuts: I used equal amount of shelled pistachios, cashew, peanuts, pecans and almonds
- dark chocolate - you can use any other chocolate of your choice, I prefer the dark one though, as it give it a healthier touch
- coconut oil - gives the chocolate a nice shine and a smoother touch
- maple syrup and honey - to coat the nuts in before roasting
Step-by-step photos and instructions
- add the nuts to a large bowl, pour over the maple syrup and honey, and mix well to coat them
- spread them over a baking tray lined with non-stick paper, and bake
- remove the pan from the oven and allow the nuts to cool down completely ( see photo 3)
- melt the chocolate and coconut oil, and coat the nuts in the chocolate mixture
- use a tablespoon to place clusters of chocolate-covered nuts on a tray lined with parchment paper ( see photo 5)
- refrigerate the nuts for at least 30 minutes or until set

Expert tips
Handle the tray with care when you take it out of the oven, the maple and honey coating makes the nuts really hot, and can cause burns. Allow them to cool down completely, they will become even crunchier.
It might seem that there isn't enough chocolate for the amount of nuts used, but not to worry, once they chocolate sets, the clusters hold together really well, and won't fall apart at all.
Rather than spreading the nuts for baking, you can also shape them into bars or squares, you can use a silicone mat for that, although I must say that the clusters are just fine.

Chocolate Nut Clusters
Ingredients
- ½ cup peanuts
- ½ cup cashew nuts
- ½ cup pistachios
- ½ cup pecans
- ½ cup almonds
- ¼ cup maple syrup
- 2 tablespoon honey
- ½ cup dark chocolate chips

Instructions
- Preheat the oven to 170 degrees Celsius (325 Fahrenheit).
- In a mixing bowl, add all the nuts, honey and maple syrup and mix well to coat.
- Line a baking tray with non-stick paper, spread the nut mixture over and bake them for 40 minutes.
- Remove them from the oven and leave them to cool down completely.
- Add the cooled nuts to a mixing bowl.
- Melt the chocolate, then pour it over the mixed nuts.
- Mix well to coat.
- Line the baking tray with another non-stick paper, then add a tablespoon of the chocolate nut mixture.
- Repeat with the rest of the mixture.
- Refrigerate until the chocolate is set.
