Chocolate-Covered Banana Peanut Butter Cups with no refined sugar added, a delicious sweet treat for kids and grown-ups alike. These scrumptious bites are made with dark chocolate, smooth peanut butter and slices of ripe bananas for a guilt-free treat that is quick and easy to make for every occasion.

If you have a sweet tooth and crave something yummy, you don't have to feel too bad about breaking your new year's resolutions of healthier eating and banning all that sugar from your cupboards.
These incredibly indulgent banana peanut butter cups are covered in dark chocolate that gives them a rich and fudgy texture and a way healthier touch than any other shop-bought chocolate treats.
I absolutely love peanut butter, and my favourite brand is Whole Earth, as it doesn't have any refined sugar added. I used smooth peanut butter for this recipe, but I usually tend to alternate between the smooth and crunchy one.
As for chocolate, the bitter, the better. Go for a chocolate with high cacao content, at least 70%, but the higher, the better. Combined with the natural sweetness of the banana and the creaminest of the peanut butter, you get the very best snack you could ask for!

Ingredients used

- dark chocolate chips - or a bark of dark chocolate of your choice
- smooth peanut butter - the recipe can work with crunchy peanut butter too, if that's what you have around
- banana - it is crucial to use a a ripe one, as this will add a lovely sweetness to the cups
- lemon juice - drizzled over the banana slices to prevent them from browning
Step-by-step photos and instructions
- slice the banana and drizzle over the lemon juice
- use your hands to massage the slices well so that they are well coated in lemon juice

- add the chocolate chips to a heatproof bowl, then place the bowl in a colander set over a pot of simmering water
- melt the chocolate until smooth
- add a teaspoon of melted chocolate to a silicone muffin case, then a teaspoon of peanut butter
- top it with a slice of banana, and cover with more melted chocolate
- refrigerate them until set

Expert tips
The melted chocolate sets pretty fast, so you have to work quickly to put the cups together. I opted to refrigerate the cups afterwards, and they were ready in one hour, but you can also freeze them, and you get a delicious frozen treat to enjoy on a hot day.
If the peanut butter is not runny enough for this recipe, you can microwave it for a few seconds, just enough to make it a bit easier to pour it. Depending on the brand, some can be rather tough, while others are quite runny.
The lemon juice, apart from preventing the banana slices from browning too quickly, also add a lovely tart kick, which works wonderfully well with the rest of the ingredients.

Banana Peanut Butter Cups
Ingredients
- 300 g dark chocolate chips ( 1 ½ cups)
- 1 ripe banana
- ½ cup smooth peanut butter
- ½ tablespoon lemon juice

Instructions
- Peel and slice the banana, and drizzle the lemon juice over the slices to coat well.
- Add the chocolate chips to a heatproof bowl, then place the bowl inside a collander that set over a pan of simmering water on a low to medium heat.
- Allow the chocoalate chips to melt until smooth.
- Add one teaspoon of melted chocolate to a silicone muffin case, then top with a teaspoon of peanut butter, a slice of banana and another teaspoon of peanut butter.
- Repeat until the ingredients are used up.
- Refrigerate the cups for at least one hour until completely set.

Notes
- using silicone muffin cases is a lifesaver, as the cups simply pop out once they are set - mess-free, and beautiful cups, just perfect!
- using lemon juice prevents the banana slices of browning too quickly, it can be either fresh lemon juice or lemon juice from a bottle
- you can also freeze these chocolate cups and enjoy them as a frozen treat
