Banana Peanut Butter Cups

Chocolate-Covered Banana Peanut Butter Cups with no refined sugar added, a delicious sweet treat for kids and grown-ups alike. These scrumptious bites are made with dark chocolate, smooth peanut butter and slices of ripe bananas for a guilt-free treat that is quick and easy to make for every occasion.

Ingredients

  • 300 g dark chocolate chips ( 1 ½ cups)
  • 1 ripe banana
  • ½ cup smooth peanut butter
  • ½ tablespoon lemon juice

Instructions

  • Peel and slice the banana, and drizzle the lemon juice over the slices to coat well.
  • Add the chocolate chips to a heatproof bowl, then place the bowl inside a collander that set over a pan of simmering water on a low to medium heat.
  • Allow the chocoalate chips to melt until smooth.
  • Add one teaspoon of melted chocolate to a silicone muffin case, then top with a teaspoon of peanut butter, a slice of banana and another teaspoon of peanut butter.
  • Repeat until the ingredients are used up.
  • Refrigerate the cups for at least one hour until completely set.

Notes

  • using silicone muffin cases is a lifesaver, as the cups simply pop out once they are set - mess-free, and beautiful cups, just perfect!
  • using lemon juice prevents the banana slices of browning too quickly, it can be either fresh lemon juice or lemon juice from a bottle
  • you can also freeze these chocolate cups and enjoy them as a frozen treat
