- 300 g dark chocolate chips ( 1 ½ cups)
- 1 ripe banana
- ½ cup smooth peanut butter
- ½ tablespoon lemon juice
Peel and slice the banana, and drizzle the lemon juice over the slices to coat well.
Add the chocolate chips to a heatproof bowl, then place the bowl inside a collander that set over a pan of simmering water on a low to medium heat.
Allow the chocoalate chips to melt until smooth.
Add one teaspoon of melted chocolate to a silicone muffin case, then top with a teaspoon of peanut butter, a slice of banana and another teaspoon of peanut butter.
Repeat until the ingredients are used up.
Refrigerate the cups for at least one hour until completely set.

- using lemon juice prevents the banana slices of browning too quickly, it can be either fresh lemon juice or lemon juice from a bottle
