Honey Mint Lemonade, a refreshing summer drink made with just 4 simple ingredients: fresh mint leaves, honey, lemon juice and water. Naturally sweetened with honey rather than refined sugar, this non-alcoholic drink goes down well with the whole family and is perfect for quenching your thirst on a hot day.

With summer in full swing, nothing cools you down better on a hot long day than a refreshing lemonade full of flavour and goodness. I absolutely love a good homemade lemonade and I always stay away from refined sugar when I make some.
I find honey to be a fantastic ingredient that not only adds natural sweetness, but also a lovely floral touch that is hard to beat. I also have these lemonade recipes on my blog: simple honey lemonade, watermelon lemonade and mango lemonade and they all go down a treat every single time.
Now, I usually add a few mint leaves to any lemonade, they add a splash of colour and a lovely hint of freshness, but this mint lemonade takes it to the next level, where the mint is the actual star of the show.
The mint leaves also add a wonderful shade of green, which can look odd for a lemonade, but once you have a taste of it, you absolutely love it! It's cooling and delicious, and so easy to make.

Ingredients overview

- mint leaves - I used fresh mint leaves from my garden, they have a strong flavour and gorgeous green colour. I wouldn't use frozen mint leaves, and you won't achieve the same freshness and colour
- honey - for the best flavour use locally-sourced honey, it often has a richer, more complex taste and a wonderful aroma compared to the cheaper runny honey from supermarkets
- lemon juice - I used juice from 2 lemons, but depending on the size of the lemons, you might need to add less to begin with, and add more only if necessary
- water - start adding 4 cups to begin with, depending on how strong you like the flavour you might want to add more

- add the mint leaves, honey and lemon juice to a blender and blend until smooth
- add the water and mix well
- strain the lemonade through a sieve or a cloth to remove any bits
- serve cold with extra ice if needed

Use freshly-squeezed lemon juice for the best possible taste, bottled lemon juice won't have the same freshness and natural taste.
Lemons vary in size and acidity, so start by adding less water and taste, you might prefer a stronger or milder lemonade.
Serve with plenty of ice and lemon slices or mint sprigs for an extra refreshing finish. You can also replace the still water with sparkling water for a sparkling lemonade.

- 15 g fresh mint leaves (0.5 oz or ½ cup lightly packed)
- 2 lemons
- 65 ml honey (2 floz or ¼ cup)
- 1 L water (4 cups)

Instructions
- Add the mint leaves, lemon juice and honey to a blender and blend until smooth.
- Add the water and mix well.
- Strain the lemonade through a fine-mesh sieve or cloth to remove any bits and garnish with fresh mint leaves and lemon slices if you wish.
