Ground Beef Noodles, a quick and easy stir fry recipe that could easily rival any takeout meal. Minimal prep and big flavours, this recipe uses a stir fry veggie mix that is easily available in any supermarket to keep it budget-friendly and delicious. Throw in the noodles of your choice, and a fantastic weeknight dinner is ready.

A packet of ramen might be cheap and convenient when time is short, but making a proper meal doesn't have to take long, and it can be done with a few quick and simple ingredients.
This ground beef noodle recipe uses fresh beef mince, a pre-packed veggie mix and noodles that can easily be found any any shop, and you can prepare a good batch for the whole family. I used this veggie mix for my Fried Chicken Spring Rolls too and it was a massive hit!
There are lots of veggie packs you can choose from in supermarkets, and you don't even need lots to put together this dish, although you can also use whatever veggies you have at home too.
Ground beef / minced beef is also cheap and readily-available, and perfect for family-meals that are comforting and delicious. I used egg noodles, but you can go for any other noodles of your choice: rice, ramen, thicker or thinner, it's all up to you.
Making your own ground beef chow mein at home can be a lot easier than you'd think, and trust me on this, it's as delicious as a take away.

Ingredients overview

- ground beef / minced beef - you only need a small amount, as the noodles are the main event, and you just need enough to make the dish more filling and protein-packed
- veggie mix - the packet I used had cabbage, carrot, cliced pepper and onion, but different packets come with different veggies and they all work well
- noodles - I used egg noodles, but anything works, even ramen
- spring onions, garlic and ginger puree - the trio base of any stir fry
- oil - for frying
- homemade Chinese sauce - uses a mixture of light soy sauce, dark soy sauce, sesame oil, rice vinegar and sugar
Step-by-step photos and instructions
- heat up the oil in a large pan or wok, add the sliced green onion, peeled and chopped garlic and ginger puree and stir fry for 20 seconds so they can release their flavour
- add the beef mince and use a wooden spoon to break it down until it's no longer pink
- continue to cook the beef until it stars to caramelise ( see photo 3)
- add the veggies and mix everything well, then continue to stir fry them until they begin to soften

- mix of the ingredients for the sauce, and pour it over the beef
- leave it to cook for 1 minute, then add the cooked noodles and mix well
- garnish with sesame seeds - optional

Expert tips
This beef and veggie stir fry can be enjoyed with rice as well - either as a fried rice, where you add the cooked rice to the mix, or served on a bed of rice.
Browning the beef well makes all the difference, you get layers of flavour that you couldn't get by cooking the beef just enough until it's no longer pink.
You can also make this dish with ramen as a one-pot meal - just add the ramen when the beef and veggie stir fry is ready, add enough water or stock to cook the ramen, and done - a much better dish that just noodles.
You can use ready-made stir fry sauce if you wish, that's absolutely fine, but I highly recommend making your own mix - it's tastier, and the bottles of soy sauces, rice vinegar and sesame oil will last you for a long time.

Ingredients
- 250 g ground /minced beef ( ½ lb)
- 150 g stir fry veggie mix (2 cups)
- 200 g noodles ( 7 oz)
- 2 spring onion
- 2 cloves garlic
- ½ tablespoon ginger puree
- 3 tablespoon vegetable oil
For the sauce
- 3 tablespoon light soy sauce
- 2 tablespoon dark soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon sesame seeds ( for garnishing, optional)

Instructions
- Cook the noodles according to the packet instructions.
- Heat up the vegetable oil in a large pan or wok, add the chopped spring onions, peeled and chopped garlic and ginger puree.
- Stir fry for 20 seconds so they can release their flavours.
- Add the ground beef, and use a wooden spoon to break it down.
- Cook it until it's no longer pink, then continue to stir fry it until it begins to caramelise into a dark brown colour.
- Add the veggies, mix everything well, and leave them to cook until they begin to soften.
- To make the sauce, mix all the ingredients together, then pour the mix over the beef and veggies.
- Add the cooked noodles, and mix everything really well.
- Garnish with sesame seeds and serve hot!
