Gammon in Coca Cola, a fantastic recipe full of festive flavours. The gammon joint is first cooked in coca cola, cloves and star anise, then nicely brushed with a mustard maple glaze and cooked in the oven to get a wonderfully christmassy ham that is incredibly delicious and easy to make. No fuss, simple ingredients and maximum flavours!
Christmas wouldn't be the same without some delicious ham to spoil our taste buds. And making your own ham from a gammon joint is an easier task than you'd think.
I have cooked a gammon joint before and it was an absolute success, the honey mustard gammon joint was juicy and cooked to perfection, and such a treat. I also have a delicious ham glazed with marmalade and mustard recipe which is so flavourful too.
But cooking the gammon joint is coke was such a game changer. You get a vibrant deep colour from the coca cola, then the glaze gives it a beautiful shine that makes the ham incredibly appealing.
Adding earthy and warm spices like allspice, cloves and star anise gives the ham a lovely festive touch that comes through so beautifully.

Ingredients used
- gammon joint - I used a 1.5 kg gammon joint ( or 3 pounds)
- coca cola - the amount used depends entirely on the pot you use to cook the gammon joint is, we basically need to cover the gammon with coke, I used 2 bottles of 1.20 l
- cloves and star anise - to add to the coke
- dijon mustard & wholegrain mustard - or the glaze
- maple syrup - for the glaze
Step-by-step photos and instructions
- arrange the gammon joint into a large and deep enough pot
- pour the coca cola over, making sure the gammon joint is well covered
- to make the glaze, combine the allspice with maple syrup, dijon and wholegrain mustard, and mix well to get a paste
- bring the pot of gammon to a boil, then leave it to cook for 40 minutes
- preheat the oven to 190 degrees Celsius ( 375 Fahrenheit)
- transfer the gammon joint to an an ovenproof dish, brush it well wih the glaze, and cook for a further 40 minutes
Expert tips
Allow the ham to rest for at least 15 minutes after it comes out of the oven, it will help the ham be juicy and moist, and the flavours will intensify. The carving will also be a lot easier.

Gammon in Coca Cola
Ingredients
- 1.5 kg gammon joint ( 3 pounds)
- 2 bottles coca cola ( 2 x 1.2 litres)
- 1 tablespoon maple syrup
- 1 teaspoon dijon mustard
- 1 teaspoon wholegrain mustard
- ½ teaspoon ground allspice
- 5 whole cloves
- 1 star anise
Instructions
- Arrange the gammon joint in a large and deep pot.
- Cover the gammon with coca cola, then bring it to the boil over a medium to high heat.
- Cook for 40 minutes, then transfer the gammon to an oveproof dish.
- Preheat the oven to 190 degrees Celsius (375 Fahrenheit).
- To make the glaze, combine the allspice, maple syrup, dijon and wholegrain mustard in a small bowl, and mix well to get a paste.
- Brush the cooked gammon with the glaze, then bake for 40 minutes.
- Remove the ham from the oven, and allow it to rest for 15 minutes before carving.
