Crockpot Meatball Sliders, a great appetizer for every occasion. The Italian-style meatballs are cooked in a rich tomato sauce with herbs and parmesan, and topped with more cheese. All this goodness is then sandwiched between some delicious buns. Pure perfection! Why not have some for Game Day?
It's not only the pumpkin season coming back with Fall, but game days too. Which means, quick appetizers to grab, while enjoying your favourite sport. And what better than sliders? My super yummy Grilled Chicken Sliders are always a big hit with us, and this time I've got something as good.
Meatballs, some heavenly bites that scream comfort food, especially when you pair them with carbs, pasta being the first choice. But sandwich them between a delicious bun, throw in some of your favourite grated cheese, and you'll lick your fingers clean.
Cooking meatballs the old fashioned way doesn't take long, but the slow cooker can be a life saver when you don't have enough time to wait for food to be ready. All you have to do is throw everything in, and wait for some serious goodness to happen.

Step-by-step photos and instructions
Now, there are two options here:
- either brown the meatballs before adding them to the crock pot, which I would recommend if you use ground beef with a higher fat content,
- or just add them raw if you use low fat ground beef. In this way, you know the sauce won't be greasy and heavy, and the meatballs will be juicy and cooked to perfection.
Start by adding to the slow cooker the chopped tomatoes, or any other sauce of your choice: tomato-based, or any other sauce, herbs, seasoning, grated parmesan and bay leaves. To make the meatballs, mix the ground beef with herbs, parmesan and seasoning, shape into balls, and add them to the sauce.
And that's it! Turn the crock pot on, and wait for the magic to happen. Depending on how watery the chopped tomatoes/sauce is, the meatballs should be ready in about 4 hours on high, and 7-8 hours on low.
How to make the meatball sliders
Once the meatballs and sauce are cooked, cut the buns into half, but not all the way through, and add a few spoonfuls of meatballs and sauce, and top with grated cheese. You can either enjoy it like that, if you are too hungry to wait around any longer, or you can pop them under the grill or in the oven for about 5-10 minutes for the cheese to melt.
The will obviously be a lot nicer if you don't skip the grilling part, since the buns will crisp up a little bit at the top, and the cheese will be nice and gooey, but it's up to you. They will taste amazing no matter what.
Any kind of buns will work, panini, or just some freshly cut bread slices. Whatever you choose, it will go down a treat for sure. Or, if you have some leftover meatballs and sauce, why not have them with some good old pasta the next. And that's another meal sorted.

Ingredients
For the meatballs
- 250 g lean ground beef (½ lb)
- ½ onion, grated or minced
- 2 cloves of garlic, minced
- ¼ teaspoon salt
- â…› teaspoon ground black pepper
- 1 tablespoon grated parmesan
- 1 teaspoon dried Italian herbs
For the tomato sauce
- 1 can chopped tomatoes 400 g, 13 oz (or any other sauce of your choice)
- 1 tablespoon grated parmesan
- 1 teaspoon Italian herbs
- ¼ teaspoon salt
- â…› teaspoon ground black pepper
- 2 bay leaves
To assemble the sliders
- 4 buns
- ½ cup grated cheddar cheese
Instructions
- Add the chopped tomatoes to the slow cooker together with the parmesan, seasoning, parmesan and bay leaves.
- To make the meatballs, mix the ground beef with minced onion, garlic, parmesan and seasoning.
- Shape into balls, and add them to the slow cooker too.
- Cook on high for 3.5-4 hours, or on low for 7-8 hours.
- Once the meatballs and sauce are ready, cut the buns in half horizontally, but not all the way through, divide the meatballs and sauce, top with grated cheese, and place under the grill for 5-10 minutes to melt the cheese.
- Alternatively, you can place the in the oven, or just enjoy them without grilling/baking.
