Olive Oil Bread Dip, a delicious appetizer with a Mediterranean touch. It's incredibly flavourful and easy to make, and ready in less than 5 minutes. It's perfect for every occasion, and can be made in advance until ready to use. Vegan and vegetarian friendly too.

If you are catering for a party or special occasion and you feel a bit overwhelmed and unsure what would be a crowd pleaser, this fantastic olive oil bread dip is perfect for impressing ever the fussiest of eaters.
All you need for it is some delicious crusty bread, and you are in for a good treat! My first choice for bread would be white crusty bread, although focaccia or flatbreads are also a good option.
It's honestly the best possibly starter you could come up with, and it's insanely quick to make: in literally 5 minutes you have the dip ready.
I must say, I would rather not make the dip just minutes before serving, as the longer you leave all the ingredients to blend and the olive oil to be infused with all that goodness, the better.
One ingredient that would really shine if allowed time to infuse is the fresh garlic. You can still get it if served straight away, but the real flavour will be stronger and bolder after a while.
So my advice is give it a few good hours, ideally overnight, and you have a bread dip that will make everyone ask for seconds.

Ingredients used

- olive oil - as pretentious as it might sound, a good-quality extra virgin olive oil will make all the difference, the taste can't possibly be compared
- garlic - fresh garlic will beat garlic powder any time, it might be more pungent, but it's the real deal
- fresh parsley - while you can make the dip with dried herbs only, the fresh parsley adds a touch of freshness and vibrancy to the dip
- dried oregano and rosemary - both herbs work wonderfully well here to add a strong herby flavour
- paprika - I opted for sweet paprika, but if you don't use any other chilli for this recipe, you can swap it for hot paprika
- chilli flakes - my absolute favoury chilli to use in dips, as they have the right kind of heat for me, and are easy to store
- salt & black pepper - to taste
Step-by-step photos and instructions
- add the olive oil to a ramekin or small bowl
- mince the garlic and add it to the bowl together with the chopped parsley, paprika, rosemary and oregano, chilli flakes, salt and pepper
- give everything a good mix and allow the flavours to infuse for at least 1 hour before serving

Expert tips
If you made a bit too much dip that doesn't get consumed, you can add it to ice cube trays and freeze it. It can then be used for seasoning various dishes.
Other ingredients that you can also add to this dip are grated parmesan, lemon juice, balsamic vinegar, fresh chillies or other dried herbs.
You can serve it as part of a platter with cured meats, olives or cheese - it really goes down well with everyone!

Olive Oil Bread Dip
Ingredients
- ½ cup extra virgin olive oil ( 125 ml)
- 2 large cloves of garlic
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- ½ teaspoon dried rosemary
- 1 teaspoon sweet paprika
- ½ teaspoon coarse sea salt
- â…› teaspoon freshly-ground black pepper
- 1 teaspoon chilli flakes
Instructions
- Mince the garlic and chop the parsley.
- In a ramekin or small bowl, add the olive oil, minced garlic, chopped parsley, herbs and seasoning, and mix everything well.
- Set the ramekin aside for at least 1 hour so that the flavours have time to infuse well.
- Serve with your favourite crusty bread.
