These beautiful Flower Cookies are incredibly delicious and perfect for Spring. They are made with a simple sugar cookie base that has a touch of vanilla, green icing sugar and are decorated with smarties to form a flower. Colourful and cheerful, these smarties cookies are a great addition to your Easter dessert menu too.

With Spring knocking at the door, and brighter, warmer days ahead of us, I am looking forward to Easter and sunshine and delicious dishes that put a smile on our faces.
And these bright and colourful Spring cookies do just that, make my heart smile and my taste buds pampered with delicate flavours. I mean, it's smarties, of course any Smarties Cookies would be delicious!
The sugar cookie dough is a simple basic recipe that can be tweaked to your liking and used for various celebrations throughout the year. I used it for my Valentine's Day Sugar Cookies too, but using a heart-shaped cookie cutter and red icing.
For another Easter touch, you can use any other cookie cutters like Easter eggs or bunnies, and use different colour sugar cookie icing and sprinkles - the sky is the limit when it comes to ideas to decorate these cookies.
What I love the most about this sugar cookie dough is that it does not spread in the oven, so they keep their shape really well, which makes them perfect for decorating.

Ingredients used

- soft butter - the texture of the butter is crucial for this recipe, it has to be soft, but not melted. Not soft enough, and it would be really hard to cream it without making an absolute mess
- granulated sugar - you can also use cater sugar, this will be creamed with the butter
- egg - without it, the dough will be too short, and the cookies will spread in the oven
- flour - plain flour is the best for this recipe, as we don't need levening agents for the cookies
- vanilla extract - or any other extract of your choice
- icing sugar - make sure you sift it very well, or the icing will be lumpy
- full-fat milk - to be mixed with the icing sugar
- green food colouring - for the green icing
- smarties - for decorating
Step-by-step photos and instructions
- in a large mixing bowl, add the soft butter and granulated sugar, and use a hand mixer to cream them ( see photo 2)
- add the egg, and beat again until you have a creamy texture (see photo 4)

- sift in the flour, add the vanilla extract and knead it into a dough
- cover the dough in clingfilm and refrigerate for 20 minutes
- use a rolling pin to roll the dough, and use a cookie cutter to cut out shapes, I used a round, flower-edged one
- line 2 baking trays with non-stick paper and arrange the cookies onto them
- bake in the preheated oven at 180 degrees Celsius for 10-12 minutes
- remove them from the oven and leave them to cool down completely

- to make the sugar cookie icing, sift the icing sugar, add the milk and mix well to get a smooth runny paste
- add the green food colouring and mix to get a uniform colour
- add a teaspoon of icing to a cookie, and gently spread it around
- decorate with smarties to get a flower shape
- leave the icing to set completely before serving

Expert tips
Allow the cookies to cool down completely before adding the icing on top, or the icing will be too runny and make a big mess. Do no not spread the icing too close to the edges of the cookies, it will spread too much.
The icing will set fairly quickly, so any decoration has to be added straight away, if you allow the icing to set, the smarties will not stick to the cookies anymore.

Ingredients
- 100 g butter, soft

- 1 egg
- 250 g plain flour
- 1 teaspoon vanilla extract
- 100 g icing sugar
- 1 tablespoon full-fat milk
- ¼ teaspoon green food colouring
- 1 cup smarties ( candies)
Instructions
- To make the cookies, add the soft butter and granulated sugar to a large mixing bowl, and use a hand mixer to beat them well until creamy.
- Crack in the egg and beat again.
- Sift in the flour, add the vanilla extract, and use your hands to knead it into a dough.
- Cover the dough with clingfilm and refrigerate for 20 minutes.
- Preheat the oven to 180 degrees.
- Roll the dough using a rolling pin, and use flower-edged cookie cutters to cut out shapes.
- Line 2 baking trays with non-stick paper and arrange the cookies onto them - I got 20 cookies.
- Bake for 10-12 minutes until the edges of the cookies are slightly golden.
- Remove the cookies from the oven and allow them to cool down completely.
- To make the icing, sift the icing sugar in a bowl, add the milk and use a spoon to mix them into a smooth paste.
- Add the food colouring, and mix well to have a uniform colour.
- Once the cookies have cooled down, add a teaspoon of the icing onto each cookie, making sure you don't spread it too close to the edges, and decorate with smarties.
- Allow the icing to set before serving.
