Easy Vegan Brownies

Easy vegan brownies with walnuts and a hint of lemon, the much-loved brownie taste, but dairy and egg free. Awesome!

I have always tried to share with you only easy homemade recipes that anyone can do. But there is easy, and Easy vegan brownies. Literally, the easiest dessert you could possibly come up with.

And guess what, it does taste like the real deal. Yeah, it might not have that richness of the buttery brownies, that by the way I absolutely love. Instead, the vegan brownies have a much lighter texture, but the same fantastic flavour.

Those of you who follow a strict vegan diet will find that perhaps smaller shops have not got that much to offer. So, what’s the solution then? Yes, home cooking, that’s right. You get to use fresh ingredients, adjust everything according to your own taste and know exactly what’s in there.

And this recipe will put a big smile on your face. It’s super douper simple, uses just a very few ingredients and it tastes like nothing else in the world. You won’t even tell it’s absolutely egg and dairy free.

Even people who can swear they can’t live without eggs and dairy will be impressed with these beauties. For this vegan version, it is entirely up to you if you want to use a square baking tray and cut the cakes into a square brownie shape, which is the popular shape of brownies.

I just thought it looks quite nice as a cake and baked it in a round cake tin that has removable walls. That makes things fairly easy, no stress whatsoever that the cake will stick to the tin. Who said baking is difficult?

Not difficult at all, especially when all you have to do is mix the ingredients together and get them in the oven. No complicated icing, no fancy cream, but still a delish. Who’s in for a few slices?

Adding walnuts gives a bit of crunch, but they can be omitted if you don’t happen to have any, it’s not crucial. Or they can be replaced with pecans, or unsalted peanuts.

The idea is that making vegan brownies from scratch is far easier than you think, no need to go for a mixed stuff box. I never actually bought something like that, I just think that adding the ingredients yourself if a lot better, you know what you used, and it’s actually a lot cheaper too in the end.

Some simple recipes don’t require fancy ingredients, but ingredients you already have in your pantry. So there you have, a super easy vegan brownies recipe, that can be baked even by a complete beginner.

Ingredients
  • 125 g plain flour
  • 150 g caster sugar
  • 1/2 tsp baking powder
  • 30 g cocoa powder
  • a pinch of salt
  • 125 ml soya milk
  • 125 ml sunflower oil
  • zest from 1 lemon
  • 1/4 cup of chopped walnuts
  • 1/4 tsp icing sugar
Instructions
  1. Preheat the oven to 180 degrees C. (375 Fahnrenheit).
  2. In a bowl, combine the flour, sugar, baking powder, cocoa powder and salt.
  3. Add the lemon zest, soya milk, sunflower oil and chopped walnuts.
  4. Mix everything well.
  5. Oil and butter a round cake tin and pour the mixture in.
  6. Bake for 25-30 minutes depending on the oven.
  7. Insert a skewer in the middle of the cake, if it comes out clean, it's done.
  8. Allow to cool, then dust with icing sugar.

    Cat de bine arata, iar pozele sunt fantastice :). Nu am mancat brownies niciodata, trebuie sa fac odata. Pare simplu.
