Easy Cream of Mushroom Soup (Gluten Free)

Easy Cream of Mushroom Soup, comforting, delicious, one of those soups that can be enjoyed throughout the year. Silky, with a delicate flavour, this soup is vegetarian and gluten free.

If you like soups, you will definitely love this healthy cream of mushroom soup. It has a lovely smooth texture and an earthy nutty flavour; l love eating it with freshly-baked bread and a bit of butter.

Creamy soups are not only delicious, but also super easy to make. And they are great in the cold season, as well as all year around.

Pretty much any vegetable can be transformed into the best comfort food one can ever get: a hot bowl of creamy soup that simply hugs you when you must need it.

From Light Roasted Tomato and Red Pepper Soup, to Simple Roasted Butternut Squash Soup or Sweet Potato Red Lentil Soup, there is no wonder why homemade food is the best; that’s because you get to choose what goes in, and how you want it to taste.

And if you really want to impress me with a nice bowl of cream soup, it has to be really hot. I cannot eat food that is not steaming hot, cold one is tasteless to me.

I used chestnut  mushrooms for this soup, but you can choose any other variety if you like. The chicken stock really worked wonders, but feel free to use vegetable one if you’d rather have a vegetarian meal.

My take on this classic cream of mushroom soup is gluten free, as I replaced the regular wheat flour with corn flour (cornstarch). Just mix a teaspoon of corn flour with 2 tablespoons of cold water, and add it to the soup just before you take it off the heat, that makes the soup thicker.

You can use double cream or heavy cream, which I usually go for, or you can use just milk, it’s entirely up to you. The cream adds a bit more richness though, hence why I prefer it.

This is just the old fashioned mushroom soup, nothing spectacular, nothing complicated, but the taste is out of this world. You gotta try this!

Ingredients
  • 400 g chestnut mushrooms
  • 1 onion
  • 3 garlic cloves
  • 100 ml double cream
  • 2 cups of good-quality chicken stock
  • 1/2 tsp fine sea salt
  • 1 tbsp butter
  • 1 tsp corn flour (cornstarch)
Instructions
  1. Chop the onion and garlic cloves finely.
  2. Add the butter to a pan and gently fry the onion and garlic on a medium heat until soft.

  3. Chop the mushrooms and add them to the pan as well.
  4. Let the mushrooms cook for about 5 minutes until the liquid released by the mushrooms is evaporated.

  5. Pour in the chicken stock and cook for a further 15 minutes.
  6. Add half of the double cream, and season with salt and pepper.

  7. Mix the corn flour with 2 tablespoons of water, then add it to the pan, the soup will thicken slightly. Leave to cook for 1-2 minutes.

  8. Remove from the heat and use a hand blender to blend the soup to a smooth texture.
  9. Add the rest of the double cream and let it simmer on a low heat for a few minutes, taking care as the soup will now bubble.
  10. Remove from the heat and serve hot.
