Baileys Cheesecake Truffles made with cream cheese, digestive biscuits, icing sugar and the famous Irish cream liquor, then coated in smooth milk chocolate and decorated with christmassy sprinkles and icing, a fabulous festive dessert for any party or celebration. Quick and easy to make, these delicious bites are pure heaven.
After my Christmas Pudding Truffles, l fell in love with these delicious little beauties, and decided to experiment again, this time by making them a cheeky treat for grown-ups, rather than for all ages. And since Baileys is my favourite festive drink, I couldn't have added a more suitable naughty touch to the truffles.
Even a small amount of cream liquor can make such a difference, these are no ordinary truffles, and your guests will find it hard to believe that they are homemade. The baileys cheesecake filling is smooth and soft, with contrasts beautifully with the hard chocolate coating.
You can leave them plain as they are, and they are still amazing, but since it's Christmas, and there is no such thing as overdoing Christmas, you can decorate them as heavily as you like: I went for sprinkles and icing, but you can go for chopped nuts too, or a combo of everything.

Ingredients needed to make baileys truffles
- digestive biscuits - or graham crackers
- full-fat cream cheese -low fat cream cheese is too watery
- Baileys cream liquor
- icing sugar -confectioners' sugar
- milk chocolate - or dark chocolate
- sprinkles and icing to decorate - optional
Step-by-step photos and instructions
- break the biscuits into chunks, and add them to a food process, then blitz until you get fine crumbs - alternatively, you can add the biscuits to a bag, and use a rolling pin to bash them to crumbs
- add the cream cheese, icing sugar and baileys, then mix again to get a smooth thick paste
- wet your hands to make it easier for the mixture not to stick, then shape balls out of the mixture - I got 9, but you can get more or less depending on the size of the balls
- chill the cheesecake bites for at least 30 minutes
- meanwhile, break the chocolate into pieces, and add them to a pan set over a pot of simmering water, until the chocolate melts
- coat each ball into the melted chocolate, and allow them to harden
- decorate with icing and sprinkles
Expert tips
These truffles are so easy to make, and absolutely delicious! I used the regular digestive biscuits, but any other biscuits can be used, as long as they are plain. Make sure not to add too much cream, otherwise the truffles won't harden, then they will be a complete mess.
I used 2 tablespoons of baileys, and I thought that was good amount, the liquor is not overpowering, but you can tell it's there. It makes the subtle flavour even more spectacular.
The milk chocolate can be replaced with dark or white chocolate, it's entirely up to one's taste, just make sure it's nice and smooth before you coat the truffles, otherwise they won't look even. And there you go, a fantastic festive dessert for a delicious Christmas.

Baileys Cheesecake Truffles
Ingredients

- 150 g full-fat cream cheese
- 2 tablespoon Baileys cream liquor
- ¼ cup icing sugar (confectioners' sugar)
- 200 g milk chocolate
- sprinkles and icing to decorate - optional
Instructions
- Break the biscuits into pieces, then add them to a food processor and blitz until you get fine crumbs.
- Add the cream cheese, icing sugar and baileys, and blitz again to a get a smooth thick paste.
- With wet hands, shape 9 balls out of the mixture, and arrange them on a tray lined with non-stick paper.
- Chill the truffles for at least 30 minutes.
- Meanwhile, break the chocolate into pieces, and add them to a bowl set over a pan of simmering water.
- Allow the chocolate to melt completely, then coat each truffle into the chocolate.
- Once the chocolate has hardened, decorate with sprinkles and icing.
