Italian Tomato Bruschetta Recipe
Italian Tomato Bruschetta made with fresh tomatoes, olives, parmesan and basil and deliciously golden and crunchy baguette slices, a fancy Italian appetizer for every party or celebration. It might look simple, but it's heavenly flavourful and tasty. It's quick and easy to make, and always a big hit with everyone.

- 10 slices of baguette (or any bread of your choice
- 1 cup cherry tomatoes
- ½ cup black olives
- 2 garlic cloves, minced
- 1 ½ tablespoon extra virgin olive oil
- ½ teaspoon balsamic vinegar
- 1 teaspoon chopped basil
- salt and pepper to taste
- ½ teaspoon mixed herbs
- 2 tablespoon shaved parmesan
Preheat the oven to 200 degrees C (390 degrees Fahrenheit).
Mix the olive oil, minced garlic and herbs, and lightly brush each baguette slice with it.
Arrange on a tray, and bake for about 10 minutes until lightly brown and crispy.
Meantime, cut the cherry tomatoes, slice the pitted black olives, and add them to a bowl together with the basil.
Season with salt and pepper, add the balsamic vinegar, and mix well.
Remove the bread slices from the oven, leave to cool, then top with the tomato mixture and shaved parmesan.
