Easy Baked Tuna Melt Sandwiches

Cheesy Baked Tuna Melt Sandwiches made with canned tuna, cheddar cheese, tomatoes, celery and mayo, a quick and easy comfort food for all ages. Unlike traditional pan-fried version, these baked tuna melts are fuss free and are ideal for feeding the whole family at once. This 15-minute recipe is ideal for busy lunches or quick dinners.

Ingredients

  • 6 slices of bread
  • 2 tins tuna (2x110 g / 4 oz)
  • 60 g full-fat mayonnaise (¼ cup)
  • 2 tomatoes
  • 2 celery stalks
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • 50 g grated cheddar cheese (½ cup)
  • 1 spring onion
  • 1 tablespoon lemon juice
  • 60 g soft butter or spreadable (¼ cup)

Instructions

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Chop the celery, spring onion and tomatoes finely, and drain the tuna well.
  • Add them to a bowl together with the mayonnaise, grated cheese, lemon juice, salt and pepper and mix well.
  • Butter each side of the bread slices, and divide the tuna mixture evenly.
  • Sandwich the bread slices together and arrange them onto a large baking tray.
  • Bake for 10 minutes or until golden and crunchy.
  • Serve hot!

Notes

  • Drain the tuna well, excess moisture will result in soggy and messy sandwiches. Butter the bread generously, it's what gives the sandwiches that golden, crunchy finish.
  • You can also add any of ingredients you like to your hot sandwiches, pickles, red onion, sweetcorn, olives, jalapenos, are all great additions that will take your tuna melt to the next level.
