Christmas White Chocolate Fudge

White Chocolate Fudge with Cranberries and Pistachios and a hint of orange, the flavours of Christmas in one overly indulgent dessert. Rich and creamy homemade fudge that is super quick and easy to make with just a few ingredients, this really is the best holiday dessert recipe. Great as an edible gift too.

Ingredients

  • 250 g granulated sugar ( 1 ¼ cup)
  • 150 ml double cream (heavy cream, 5 oz)
  • 1 tablespoon glucose syrup
  • 1 teaspoon orange essence
  • 15 g butter
  • 50 cup dried cranberries and pistachios (¼ cup)
  • 50 g white chocolate (½ cup)

Instructions

  • In a pan, add the double cream, sugar, glucose syrup and butter, and set over a low heat.
  • Bring to a boil, then stir occasionally until it starts to thicken to the soft ball stage, this might take anything between 10 or 15 minutes.
  • Remove from the heat, add the white chocolate, and stir well, the mixture will thicken further at this stage.
  • Add the cranberries and pistachios, then quickly spread the mixture over a tray that had been lined with non-stick paper.
  • Leave to cool completely, then cut into squares.

Notes

  • spread the fudge as soon as it's off the heat, otherwise it will start setting really quickly, and you won't have an even layer of fudge
  • allow the fudge to set completely before slicing
  • handle the fudge with care, it's really hot!
