Chocolate Cornflake Squares

Chocolate Cornflake Squares topped with mini chocolate eggs and mini Cadbury creme eggs, an indulgent no-bake Easter treat for kids and grown-ups too. The cornflake squares are crunchy and chocolatey, and incredibly delicious. They can be made for Easter, but also after the celebration to use up any leftover chocolate eggs or bars you have around.

Ingredients

  • 65 g cornflakes ( 4 cups)
  • 200 g milk chocolate ( 7 oz)
  • 200 g white chocolate (7 oz)
  • 2 tablespoon golden syup ( or honey)
  • 60 g butter ( ¼ cup)
  • 100 g mini chocolate eggs ( ¼ cup)
  • 5 mini Cadbury creme eggs

Instructions

  • Melt the milk chocolate, white chocolate and butter.
  • Add them to a mixing bowl together with the golden syrup, and use a spatula to mix them well.
  • Add the cornflakes and mix well to combine all the ingredients.
  • Line a baking tray ( mini is a square tray with 20 cm / 8 inches in diameter) and transfer the cornflake mixture.
  • Use the back of a spoon to press it down well.
  • Cut the mini creme eggs in half, and add the mini eggs to a bag and crush them with a rolling pin.
  • Top the cornflake mixture with the chocolates.
  • Refrigerate for at least one hour before slicing.

Notes

  • Don't cut down on the amount of chocolate used, it's important to keep the ratio cornflake to melted chocolate, otherwise the squares won't set well and they will be crumbly and hard to slice.
  • You can either freeze the cornflake mixture if you want to serve these treats quickly - it shoudn't need more than half an hour in the freezer, or you can refrigerate it for at least 1 hour, ideally longer.
  • Keep the cornflake bars in the fridge if you are not going to consume them quickly, a warm room will make the chocolate melt and the squares will be quite messy.
  • An easy way of slicing the mini Cadbury creme eggs is to freeze them for at least 30 minutes. Use a sharp knife to slice them in the middle vertically, you will get 2 perfect halves that are not messy at all!
