Air Fryer Pumpkin-Spice Granola
Air Fryer Pumpkin-Spice Granola with no refined sugar added, a delicious breakfast recipe that is full of goodness and has a wonderful Fall touch. It's made with rolled oats, walnuts, pecans, pumpkin and sunflower seeds, almond flakes and mixed dried fruit, a good helping of pumpkin pie spice and maple syrup. Quick and easy to make, this is a fantastic breakfast option for all ages.

- 90 g rolled oats (1 cup)
- 65 ml maple syrup (¼ cup)
- 3 tablespoon vegetable oil
- 30 g walnut halves (¼ cup)
- 30 g pecans (¼ cup)
- 30 g almond flakes (¼ cup)
- 30 g mixed dried fruit (¼ cup, I used dried sultanas, raisins, currants and cranberries)
- 30 g sunflower and pumpkin seeds (¼ cup)
- 1 teaspoon pumpkin spice
Add the roughly-chopped walnuts and pecans, sunflower and pumpkin seeds, rolled oats and almond flakes to a large bowl.
Mix everything well, then add the pumpkin spice, maple syrup and oil, and mix again.
Spread the mixture over the bottom of an air fryer drawer in an even layer, and air fry for 20 minutes at 140 degrees Celsius (284 Fahrenheit), shaking the drawer well half the way through.
Add the dried fruit, mix well, and air fryer for a further 10 minutes.
Remove the mixture from the air fryer, spread it over a large baking tray, and allow it to cool down completely to crisp up.
Store in an air-tight container.
- the granola won't feel crunchy as soon as it comes out of the air fryer, but don't worry, it will, as soon as it cools down completely
- avoid adding the dried fruit to the air fryer from the beginning, it will burn and turn bitter
- once the granola has cooled down, add it to an air-tight container, I prefer a jar, it keeps well for 2-3 weeks
