- 1 lettuce head
- ½ English cucumber
- 2 large tomatoes
- ½ cup Kalamata Olives, pitted (80 g)
- 2 spring onions
For the salad dressing
- 2 tablespoon olive oil
- 1 teaspoon cider vinegar
- ¼ teaspoon coarse sea salt
- a pinch of black pepper
- 1 tablespoon chopped fresh dill
Wash and roughly chop the lettuce.
Chop the cucumber, spring onions, and tomatoes, and slice the olives.
In a bowl, add the olive oil, cider vinegar, salt, pepper and chopped dill, and mix well.
Drizzle the dressing over the salad and mix.
Serve chilled from the fridge!
