Peel and cut the potatoes into chunks, de-seed and cut the peppers into strips, and peel and cut the onion into wedges.
The chorizo sausage can be sliced or cubed.
Arrange all chicken and vegetables on the tray, leaving the garlic cloves in their skin, otherwise the garlic will become bitter in the oven if cooked for a long time.
Drizzle the olive oil over, and season with smoked paprika, then add the dried rosemary and thyme springs.
Cook in the pre-heated oven for one hour or until the chicken and the vegetables are fully cooked.
