Ingredients

  • 5 skinless, boneless chicken thighs
  • 1 chorizo sausage
  • 4 large potatoes
  • 1 red pepper
  • 1 yellow pepper
  • a handful of cherry tomatoes
  • 1 onion
  • 4 fresh thyme sprigs
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 2 tablespoon olive oil
  • 4-5 garlic cloves

Instructions

  • Peel and cut the potatoes into chunks, de-seed and cut the peppers into strips, and peel and cut the onion into wedges.
  • The chorizo sausage can be sliced or cubed.
  • Arrange all chicken and vegetables on the tray, leaving the garlic cloves in their skin, otherwise the garlic will become bitter in the oven if cooked for a long time.
  • Drizzle the olive oil over, and season with smoked paprika, then add the dried rosemary and thyme springs.
  • Cook in the pre-heated oven for one hour or until the chicken and the vegetables are fully cooked.
