Grilled Chicken Caesar Salad with Yogurt Dressing

- 2 medium chicken breasts
- 1 avocado
- 1 packet crunchy salad (one Romaine lettuce)
- 1 cup croutons
- 2 tablespoon parmesan cheese
for the yogurt dressing
- 3 tablespoon Greek yogurt
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- 1 ½ teaspoon Worcestershire sauce
- 2 cloves of garlic, minced
- black pepper to taste
for the grilled chicken
- 1 teaspoon garlic granules
- ½ teaspoon paprika
- 1 teaspoon olive oil
- salt and pepper to taste
To cook the chicken, cut the chicken breasts into chunks, add them to a re-seable bag together with the olive oil, paprika, garlic, salt and pepper. Shake the bag well to coat.
Heat up a grill pan, add the chicken pieces and cook for 6-7 minutes until cooked through.
Remove from the heat and set aside.
Add the salad to a bowl together with the chopped avocado, croutons, cooked chicken and parmesan.
To make the dressing, combine the yogurt, olive oil, lemon juice, garlic mince, worcestershire sauce and pepper.
Drizzle it over the salad, and toss well to coat.
Serve cold.
