Grilled Chicken Caesar Salad with Yogurt Dressing

Healthy Grilled Chicken Caesar Salad with avocado and a light yogurt dressing, a healthier version of the classic caesar salad. Super quick and easy to make, this is a great recipe for a work lunch or light dinner.

Ingredients

  • 2 medium chicken breasts
  • 1 avocado
  • 1 packet crunchy salad (one Romaine lettuce)
  • 1 cup croutons
  • 2 tablespoon parmesan cheese

for the yogurt dressing

  • 3 tablespoon Greek yogurt
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice
  • 1 ½ teaspoon Worcestershire sauce
  • 2 cloves of garlic, minced
  • black pepper to taste

for the grilled chicken

  • 1 teaspoon garlic granules
  • ½ teaspoon paprika
  • 1 teaspoon olive oil
  • salt and pepper to taste

Instructions

  • To cook the chicken, cut the chicken breasts into chunks, add them to a re-seable bag together with the olive oil, paprika, garlic, salt and pepper. Shake the bag well to coat.
  • Heat up a grill pan, add the chicken pieces and cook for 6-7 minutes until cooked through.
  • Remove from the heat and set aside.
  • Add the salad to a bowl together with the chopped avocado, croutons, cooked chicken and parmesan.
  • To make the dressing, combine the yogurt, olive oil, lemon juice, garlic mince, worcestershire sauce and pepper.
  • Drizzle it over the salad, and toss well to coat.
  • Serve cold.
