- 180 g spaghetti (6 oz)
- 300 g raw king prawns (10 oz)
- 125 ml double / heavy cream (½ cup)
- 3 cloves of garlic
- ⅛ teaspoon black pepper
- 4 tablespoon grated parmesan cheese
- 1 teaspoon salt
- 2 tablespoon chopped parsley
- 30 g butter (2 tbsp)
Cook the spaghetti according to the packet instructions.
When it's cooked, reserve two tablespoons of water, then drain the rest, but don't rinse the pasta.
Melt the butter in a pan over a medium heat, add the prawns, season them with salt and pepper, and add the chopped garlic.
Cook the prawns on both sides until they turn pink.
Remove the prawns from the pan, add the two tablespoons of water and the cream, and bring to a boil.
Add the pasta to the pan, together with the parmesan, cooked prawns, and season with salt and pepper.
Toss well to combine all the ingredients.
Garnish with freshly-chopped parsley.
Serve hot.
- You can season the shrimp before adding it to the pan, some garlic granules or a bit of chilli are a nice choice, but otherwise, just salt and pepper will do.
- I don't usually cook with wine, but if you do, you can add a splash of white whine to the pan before adding the cream, although the dish is absolutely beautiful without it too.
- The parmesan gives a nice flavour, and cuts the richness of the cream and butter, so you use it. If you don't have parmesan, choose any other strong-flavoured hard cheese, for that extra sharpness.
