Ingredients

  • 6 pears
  • 150 g butter ( ½ cup + 2 tbsp)
  • 150 g granulated sugar (¾ cup)
  • 1 teaspoon ground cinnamon
  • 100 g walnuts ( 1 cup)
  • 50 g oats ( ½ cup)
  • 45 g light brown sugar ( 3 tbsp)
  • 100 g plain flour (¾ cup)

Instructions

  • Preheat the oven to 190 degrees Celsius (375 Fahrenheit).
  • In a large mixing bowl, add the flour and cold butter cut into cubes, and use your fingertips to rub the flour and butter together until the mixture resembles breadcrumbs.
  • Add the granulated sugar, oats and walnuts chopped roughly and mix well to combine.
  • Set aside or refrigerate while you get on with the pears.
  • Peel, core and chop the pears into cubes.
  • Add the ground cinnamon and light brown sugar, and mix well to combine.
  • Butter an ovenproof dish ( mine is 28 x 22 x 7 cm / 11 x 8 ½ x 3 inches), add the pears into an even layer, and top with the walnut mixture.
  • Bake for 40 minutes or until the topping is golden.

Notes

  • Make sure the butter you use is cold straight from the fridge, it will help with a crispier topping. You can refrigerate the topping while you get the apples ready, just so the butter can stay cool.
  • Do not add the walnuts to the pear mixture, as they tend to get pretty soft, whereas if you add them to the topping, they toast nicely and get a lovely crunch that takes the pear crisp to the next level.
  • You can mix the pears with any other season fruit you have around, at this time of the year apples, plums, blackberries, blueberries are in season, and they make a great combo.
