Cheesecake Dip

Cheesecake Dip, a light and refreshing summer dessert made with only 4 ingredients. It's a fantastic last-minute treat that is perfect for dipping biscuits/ cookies / pretzels or fruit, and it can be whipped up for any party, BBQ, potluck or picnic. Family-friendly, and ready in just 5 minutes, this sweet cream cheese dip is absolutely delicious.

Ingredients

  • 250 g cream cheese ( 1 cup)
  • 125 ml double cream ( ½ cup heavy cream or whipped cream)
  • 3 tablespoon icing sugar (confectioners' sugar)
  • 1 teaspoon vanilla extract

To serve: shortbread cookies and berries

Instructions

  • Add the double cream to a mixing bowl and use a hand mixer to beat it until you get soft peaks.
  • Sift in the icing sugar, add the cream cheese and vanilla extract, and beat again briefly to get a smooth texture.
  • Serve it with cookies / biscuits and fresh berries.
