- 2 medium avocados
- 1 tablespoon cocoa powder
- 150 ml whipped cream
- 1 tablespoon vanilla sugar
Peel the avocados and add the flesh to a food processor together with the cocoa powder and blitz to get a smooth paste.
In a bowl, beat the whipped cream with the vanilla sugar until you get stiff peaks, then gently fold the mixture into the avocado paste.
Add maple syrup or honey if you want the mousse sweeter.
Divide the mixture between 2 pots and chill for 4-6 hours, ideally overnight.
Serve cold.
