Kid-Friendly Hidden Vegetable Pasta Sauce

Hidden Vegetable Pasta Sauce, the only homemade sauce you must have in the fridge to bring a smile on those fussy little eaters' face; babies, toddlers, boyfriends/husbands included. Great with pasta of any shapes and sizes.

Ingredients

  • 1 potato
  • 1 carrot
  • 5 fresh spinach leaves
  • 1 spring onion
  • 1 garlic clove
  • 4 tablespoon tomato passata
  • 1 teaspoon vegetable oil
  • 1 tablespoon cream cheese
  • ¼ teaspoon dried basil

Instructions

  • Add the vegetable oil to a pan and fry the onion and garlic for a few seconds, then add the other vegetables, cover with water and leave to cook on a medium heat for about 10-15 minutes or until all vegetables are tender.
  • Remove from the heat, drain the liquid and transfer the vegetables to a blender.
  • Blitz to a smooth consistency, then add to the pan again together with the tomato passata and heat it up for about 2 minutes, stirring continuosly.
  • Remove from the heat, add the cream cheese and dried basil and mix well.
  • Serve with cooked pasta.
