Kid-Friendly Hidden Vegetable Pasta Sauce

- 1 potato
- 1 carrot
- 5 fresh spinach leaves
- 1 spring onion
- 1 garlic clove
- 4 tablespoon tomato passata
- 1 teaspoon vegetable oil
- 1 tablespoon cream cheese
- ¼ teaspoon dried basil
Add the vegetable oil to a pan and fry the onion and garlic for a few seconds, then add the other vegetables, cover with water and leave to cook on a medium heat for about 10-15 minutes or until all vegetables are tender.
Remove from the heat, drain the liquid and transfer the vegetables to a blender.
Blitz to a smooth consistency, then add to the pan again together with the tomato passata and heat it up for about 2 minutes, stirring continuosly.
Remove from the heat, add the cream cheese and dried basil and mix well.
Serve with cooked pasta.
