Guinness Cheese Dip

Guinness Cheese Dip, a guaranteed crowd-pleaser for every party or celebration. It's a great dip to serve with pretzels or pretzel bites, breadsticks, tortillas, soda bread, potato cakes or anything else that takes your fancy. It's incredibly creamy and it has a nice sharp kick coming from the Guinness and the cheeses. What a winner!

Ingredients

  • 30 g butter ( 2 tbsp)
  • 30 g flour (2 tbsp)
  • 250 ml full-fat milk (1 cup)
  • ½ teaspoon dijon mustard
  • ¼ teaspoon ground black pepper
  • 125 ml Guinness stout (½ cup)
  • 1 cup grated cheddar cheese
  • ½ cup grated parmesan cheese
  • 1 tablespoon Worcestershire sauce

Instructions

  • In a pan, melt the butter and add the flour.
  • Use a whisk to mix everything well into a paste.
  • Pour over the milk, and continue to stir until the mixture thickens into a sauce.
  • Pour in the Guinness, add the dijon mustard, ground black pepper, Worcestershire sauce, and whisk.
  • Add the cheeses and mix well until they melt.
  • Serve the sauce immediately.

Notes

  • The sauce is at its best hot, that is why I highly recommend serving it as soon as it's ready. The flavours are a lot more intense than when it cools down.
  • Plus, it's ready in well under 10 minutes, so it's worth making it just before it is time to serve it. As long as everything else is ready, the dip won't take long at all.
