- 1 cup orzo
- 1 ½ cup bacon, cut into cubes
- ⅔ cup frozen peas
- 1 onion
- 1 tablespoon butter
- 2 ½ cup chicken stock (broth)
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup grated parmesan
In a pan set over a high heat, add the bacon and fry until crispy.
Add the peeled and chopped onion, and fry for a further 2-3 minutes until the onion has soften.
Add the butter and frozen peas, and give everything a good stir.
In goes the orzo, mix everything well, the pour over the stock.
Decrease the heat to medium, place a lid on the pan, and leave it to cook until the liquid is evaporated.
Add the parmesan and season with salt and pepper.
- Keep an eye on it to make sure the orzo does not stick to the bottom of the pan when the liquid evaporates, especially if the pan is not a non-stick one. You can stir it now and then to ensure you get the right texture.
- Any raw meat must be cooked before the veggies and orzo are added to the pan, otherwise, if you use leftover meat of any sort, they can be all added at the same time.
