Gingerbread Cupcakes

A delicious festive dessert that is incredibly easy to make, but so spectacular.

INGREDIENTS: For the sponges – butter – brown sugar – golden syrup – black treacle (or molasses) – eggs – milk – self-raising flour – ground ginger – mixed spices

INGREDIENTS: For the icing – butter, soften – icing sugar (confectioners' sugar) – milk – vanilla extract

Add the butter, brown sugar, treacle and syrup to a pan set over a low heat.

Stir occasionally until it melts into a smooth  mixture

Beat the eggs well

Pour the milk over the eggs, and mix well

Pour the egg mixture over the butter mixture, and mix well

In a large bowl, sift the flour, add the ginger and spices, then pour over the wet ingredients

Use a whisk to mix all the ingredients until you get a smooth batter

Divide the mixture evenly between the muffin/cupcake tin holes that had been lined with paper cases

Bake until well risen and a skewer inserted in the middle comes out clean

To make the icing, add all the ingredients to a food processor, and blitz to a smooth consistency
