Crustless Broccoli and Cheese Quiche, a healthy recipe that is ready in about 30 minutes. Low carb and gluten free, this quiche caters for all tastes. It's also kid-friendly recipe. It can be served for brunch, lunch or dinner, either on it's own or as a side dish for roast. It's healthy, it's easy to make, and really delicious, and looks a lot like a frittata too. A great recipe for breakfast and brunch too.

Ingredients
  • 5 medium eggs
  • 1/2 cup milk
  • 1/2 cup double cream (heavy cream)
  • 1/2 cup grated Cheddar and Red Leicester cheese
  • 1 small broccoli head
  • 1/4 tsp salt
  • a pinch of black pepper
  • 1/4 cup cooked chicken pieces (optional)
Instructions
  1. Preheat the oven to 180 degrees Celsius (360 Fahrenheit).

  2. Break the broccoli head into small florets, and cook for about 5 minutes until tender. Set aside and leave to cool.

  3. Beat the eggs, then add the milk, double cream, salt and pepper and mix well.

  4. In a quiche or flan tin, spread the broccoli florets. grated cheese and chicken pieces (if you use) over the bottom on the tin, then pour over the egg mixture.

  5. Bake for about 20 minutes or until the quiche is cooked through.

  6. Serve warm or cold.
