Baked Zucchini Bites with Feta Cheese in a muffin tin, a fantastic low-calorie, low carb appetizer for the grilling season. Healthy, super yummy, best served cold with a nice dollop of sour cream or Greek yogurt. It has only 40 calories each cup, which makes them ideal if you are looking for healthy recipes. These zucchini bites are a great summer recipe, and make a lovely appetizer for every party or celebration. They are ridiculously easy to make too.

Ingredients
  • 2 zucchini
  • 1 egg
  • 2 spring onions, chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1 tsp baking powder
  • 1/4 tsp salt
  • a pinch of black pepper
  • 1 tsp chopped fresh dill
  • 3 tbsp parmesan cheese, grated
Instructions
  1. Grate the zucchini with their skin on, then add a pinch of salt, toss well, and set aside for 20 minutes to release as much liquid as possible.

  2. Squeeze the liquid very well using your hands, then transfer the grated zucchini to a bowl, and add the other ingredients.

  3. Pre-heat the oven to 200 degrees Celsius (390 Fahrenheit).

  4. Oil a muffin tin, then shape 10 patties and place them in each muffin hole, making sure the patties cover the tin walls as well.

  5. Bake for about 30 minutes, until the edges are crisp, and golden. Use a sharp knife to remove them from the muffin tin.

  6. Serve cold with a dollop of sour cream or Greek yogurt.
