- 1 medium chicken breast
- ½ avocado
- 2 slices of wholemeal bread
- 1 mozzarella cheese slice
- ⅛ teaspoon cayenne chilli peppers
- ¼ teaspoon paprika
- ¼ teaspoon granulated garlic
- ¼ teaspoon salt
- ½ teaspoon lemon juice
Halve the chicken breast, and use a meat tenderizer to thin each half.
Mix the cayenne chilli peppers, paprika, garlic and salt, then rub the mixture onto the chicken breast halves.
Heat up a grill pan, place the chicken halves and grill on both sides for about 5-6 minutes until cooked through.
Use a fork to mash the avocado, then drizzle the lemon juice over, and spread it on one bread slice.
Place the chicken breasts on top of the avocado, then top it with the cheese slice and the other bread slice.
Grill the sandwich on both sides for about a minute, until the cheese is melted. Serve hot or cold.
- Avocadoes tend to brown quickly if they are not consumed straight-away, so using lemon juice helps prevent the browning process.
- Squeeze a bit of lemon of them, and they will keep fresh for longer. You can use the same tricks if you use avocadoes in salads or dips.
