Romanian Vegan Bean Soup, a delicious and healthy recipe that is low carb and gluten free. Light, with a subtle flavour of thyme, this is a traditional recipe that we all love.

Ingredients
  • 1 cup dried white beans
  • 4 cups vegetable stock (broth)
  • 2 carrots
  • 1 onion
  • 1 green pepper
  • 1 tsp vegetable oil
  • 1 tbsp tomato puree
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbsp chopped parsley
  • 1 tsp dried thyme
Instructions
  1. Place the white beans in a large bowl, add plenty of cold water to cover them and leave them to soak, ideally overnight.
  2. Transfer the white beans to a large sauce pan, cover them with water and bring to a boil.

  3. Meanwhile, finely chop the onion, carrots and green pepper.
  4. Take the pan off the heat, drain the water, then put the beans back in the pan.

  5. Add the chopped vegetables and vegetable stock and cook until the beans are tender. Some beans can take longer to cook, so patience is a virtue, as usual.
  6. Add the tomato purée, vegetable oil, season with salt and pepper to taste, then add the thyme, and garnish with freshly-chopped parsley.

  7. Remove from the heat and cover with a lid for at least 10 minutes.
  8. Serve hot!
Recipe Notes

Soaking time for the beans has not be taken into account when calculated prep and cooking time. It depends entirely for how long you want to soak the beans.
