Grilled Turkey Kofta with Tomato Onion Salad

Grilled Turkey Kofta with tomato and onion salad, a healthy and delicious meal for any season. It goes down well with the whole family, and it can make a fantastic bbq or picnic when the weather is nice. Great for those on a low carb diet too.

Ingredients

For the turkey kofta

  • 450 g turkey thigh mince (1 lb)
  • 1 small onion
  • 1 carrot
  • 1 boiled potato
  • 1 tablespoon vegetable oil
  • 1 tablespoon freshly-chopped parsley
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Greek yogurt to serve (optional)

For the tomato onion salad

  • 3 tomatoes
  • ½ onion
  • 1 teaspoon extra virgin olive oil
  • ½ teaspoon vinegar
  • a pinch of salt and pepper
  • fresh parsley, to garnish

Instructions

  • To make the kofta, grate the onion, carrot and potato and combine with the turkey mince.
  • Add the oil, and chopped parsley and season with salt and pepper. Shape patties no thicker than 1 cm or ½ inch each.
  • If you use a grill pan, pre-heat it, then shape 12 patties and place on the grill, for about 2-3 minutes on each side.
  • If you use a large grill, shape the kofta around 12 skewers, then grill until cooked through.
  • To make the salad, chop the tomatoes and onion, and add them to a bowl.
  • Add olive oil and vinegar, season to taste, mix well and garlish with chopped parsley.
