Vegan Chocolate Mousse with aquafaba, a guilt-free dessert that is low in calories, quick and easy to make. So fluffy, light, yet indulgent and chocolatey. No bake, and with only 3 ingredients, no one will believe that this chocolate mousse is dairy free. The secret to making the best mousse out of chickpea water is to beat it very well for at least 10-15 minutes until it has a meringue-light consistency, then it's all a matter of mixing all the ingredients.

Ingredients
  • 125 ml chickpea liquid
  • 150 g dark chocolate
  • 2 tbsp caster sugar
Instructions
  1. Break the chocolate into smaller pieces and place them in a heat-proof bowl.
  2. Sit the bowl over a pan of simmering water and allow to melt completely.

  3. Set aside to cool.
  4. Measure 125 ml (4.23 floz)  of chickpea liquid and pour into a large bowl.

  5. Beat with a mixer until you get soft peaks.
  6. Gradually add the caster sugar and continue to beat until you get stiff peaks, depending on the speed of your mixer, it may take 10 to 15 minutes.
  7. Use a silicone spatula to gently fold it in the melted chocolate and mix just enough to get a smooth and fluffy consistency.

  8. Transfer to cups or a bowl of your choice and refrigerate for at least 1 hour until set.
