Almond-Crusted Cod

Almond-Crusted Cod baked to perfection with a topping made of breadcrumbs, almond flakes, seasoning and paprika, and served with roasted asparagus and couscous, a healthy and delicious dinner idea that is quick and easy to make. A great dish all over the year, and definitely a crowd-pleaser.

Ingredients

  • 4 cod fillets
  • 2 slices of bread
  • ½ cup almond flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon paprika
  • a bunch of asparagus
  • ½ cup wholemeal couscous
  • 25 g butter
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Add the bread slices to a food processor and blitz until you get breadcrumbs.
  • Add the almond flakes, salt, pepper and paprika and blitz again for a few seconds - we don't want a fine texture, but a coarse one.
  • Melt the butter, and brush each cod fillet with it, then top each fillet with the almond mixture.
  • Bake for 15 minutes or until cooked through and golden.
  • At the same time, arrange the asparagus on a baking tray, drizzle with olive oil and sprinkle some salt, and bake for the same amount of time as the fish.
  • Add the couscous to a bowl, cover with boiling water, place a lid on, and leave to hydrate for 5 minutes.
  • Serve everything hot.
