- 4 cod fillets
- 2 slices of bread
- ½ cup almond flakes
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon paprika
- a bunch of asparagus
- ½ cup wholemeal couscous
- 25 g butter
- 1 tablespoon olive oil
Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
Add the bread slices to a food processor and blitz until you get breadcrumbs.
Add the almond flakes, salt, pepper and paprika and blitz again for a few seconds - we don't want a fine texture, but a coarse one.
Melt the butter, and brush each cod fillet with it, then top each fillet with the almond mixture.
Bake for 15 minutes or until cooked through and golden.
At the same time, arrange the asparagus on a baking tray, drizzle with olive oil and sprinkle some salt, and bake for the same amount of time as the fish.
Add the couscous to a bowl, cover with boiling water, place a lid on, and leave to hydrate for 5 minutes.
Serve everything hot.
