  • 1/2 cup wholemeal flour
  • 1/2 cup self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp ground cinnamon
  • 1/2 cup chopped walnuts
  • 2 well ripen bananas
  • 2 eggs
  • 2 tbsp milk
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  1. Preheat the oven to 180 degrees Celsius (360 Fahrenheit).

  2. In a bowl, sift the flours, add the bicarb of soda, cinnamon and walnuts.

  3. In a separate bowl, beat the eggs until frothy, add the milk, oil and vanilla extract.

  4. Use a fork to mash the bananas, then add them to the egg mixture.

  5. Combine the dry ingredients with the wet ingredients.

  6. Grease and flour a load tin, then pour the batter in.

  7. Bake for 35 minutes or until a skewer inserted in the middle comes out clean (I placed the tin on the middle rack in the oven after 20 minutes, to avoid the top from browning too quickly.
