Ingredients

  • 1 lettuce head
  • ½ cucumber
  • 2 large tomatoes
  • ½ cup Kalamata Olives, pitted
  • 2 spring onions

For the salad dressing

  • 1 teaspoon olive oil
  • ½ teaspoon cider vinegar
  • teaspoon salt
  • a pinch of black pepper
  • 1 tablespoon fresh dill

Instructions

  • Wash and roughly chop the lettuce.
  • Chop the cucumber, spring onions, and tomatoes, and slice the olives.
  • In a bowl, add the olive oil, cider vinegar, salt, pepper and chopped dill, and mix well.
  • Drizzle the dressing over the salad and mix.
  • Serve chilled from the fridge!
